A Witch in the Kitchen: "Peaches in Syrup for my Mother's Birthday" [EN] // Una Bruja en la Cocina: "Duraznos en Almíbar para el Cumpleaños de mi Madre" [ES]

This weekend was my mother's 59th birthday, a couple of weeks ago we were about to lose her, so the day was quite emotional, and unfortunately we often wait for someone's birthday to celebrate their life, when it is something we should do every day, This year I did not make her cake because I really did not have the time available for it, but I wanted to reward her with a sweet that she would love, and Saturday when I went to the supermarket I found some beautiful peaches and I could not resist the temptation to buy a good amount to make them in syrup, which besides being delicious are very easy to prepare.



I remember that these were never missing in the cupboard of my house whether they were made by my beloved grandmother or bought by my father, in cans, in glass containers, whole with or without seeds, but there were always in the cupboard. Over time and as my parents stopped eating sweets we stopped seeing them at home so this was also a way to remind my mother of that time that I know she loved. Preparing these peaches in syrup is really easy you just have to have a little patience and the result will surely be the best.



Few ingredients and a relatively quick preparation make this candy a real treat that everyone at some point should try, they are creamy and by the fact of not removing the skin, create a kind of sweet bomb that when biting lets out all that creamy and delicious pulp. But join me and I'll show you how to prepare it.

Ingredients

2 kg Ripe peaches
1 kg Cane sugar
1 Cdta Allspice
1 Cdta Cloves
3 twigs Cinnamon
1 Medium lemon




Preparation

Preparation time 20 Minutes
Cook Time 120






We begin by washing the peaches very well and removing the stems, then we are going to boil for about 10 minutes in enough water, after the time we take them out and run them under cold water to cut the cooking, then we make a cross cut in the peaches and reserve them in the pot where we will cook the candy, we continue covering them with sugar.












We continue adding the cinnamon, cloves and allspice, and add the lemon juice, this will help to activate the pectin of the fruit and will make our syrup is with a better consistency, let stand for an hour or two and then bring to medium heat for about 60 minutes, stirring eventually, after this time we turn off the heat and let cool to consume.











Cold and with a good portion of mantecado ice cream, this sweet is a real treat, but who am I kidding, this is not going to get to the day when I can get out of the diet to enjoy it as I wish hahaha, my mother who was the entertained was more than satisfied with this deliciously sweet, and my father snuck in to eat a few, after all, they have a lifetime sharing absolutely everything, and this was not going to be the exception.

Este fin de semana fue el cumpleaños número 59 de mi madre, hace un par de semanas estuvimos a punto de perderla, por lo que el día fue bastante emotivo, y es que lamentablemente esperemos muchas veces a que sea el cumpleaños de alguien para celebrar su vida, cuando es algo que deberíamos hacer a diario, este año yo no hice su pastel porque realmente no tenía el tiempo disponible para ello, pero quise recompensarla con un dulce que a ella le encantaría, y es que el sábado al ir al supermercado me encontré con unos duraznos hermosos y no pude aguantar la tentación de comprar una buena cantidad para hacerlos en almíbar, que además de deliciosos son muy fáciles de preparar.



Recuerdo que estos nunca faltaban en la alacena de mi casa bien fueran hechos por mi amada abuela o comprados por mi padre, en latas, en envases de vidrio, enteros con o sin semillas, pero siempre había en la alacena. Con el tiempo y a medida que mis padres fueron dejando un poco el consumo de dulces ya dejamos de verlos en casa así que esta fue además una manera de hacerle recordar a mi madre esa época que se que ella amaba. Preparar estos duraznos en almíbar es realmente fácil solo hay que tener un poco de paciencia y el resultado seguramente será el mejor.



Pocos ingredientes y una preparación relativamente rápida hacen de este dulce una verdadera delicia que todos en algún momento deberían probar, son cremosos y por el hecho de no quitarles la piel, crean una especie de bomba dulce que al morder deja salir toda esa pulpa cremosa y deliciosa. Pero acompáñame y te muestro como lo prepare.

Ingredientes

2 kg Duraznos maduros
1 kg Azúcar de caña
1 Cdta Pimienta inglesa
1 Cdta Clavos de olor
3 ramitas Canela
1 Limón mediano





Preparación

Tiempo de preparación 20 Minutos
Tiempo de Cocción 120






Comenzamos lavando muy bien los duraznos y quitando los nacientes, luego vamos a hervir por unos 10 minutos en suficiente agua, pasado el tiempo los sacamos y pasamos por agua fría para cortar la cocción, luego hacemos un corte en cruz en los duraznos y reservamos en la olla donde cocinaremos el dulce, continuamos cubriéndolos con el azúcar.











Continuamos agregándole la canela, los clavos de olor y la pimienta inglesa, y adicionamos el zumo del limón, esto ayudara a activar la pectina de la fruta y hará que nuestro almíbar quede con una mejor consistencia, dejamos reposar por una o dos horas y luego llevamos a fuego medio por aproximadamente 60 minutos, revolviendo eventualmente, pasado este tiempo apagamos el fuego y dejamos enfriar para consumir.










Frio y con una buena porción de helado de mantecado, este dulce es una verdadera delicia, pero a quien engaño, esto no va a llegar al día en el que me puedo salir de la dieta para disfrutarlo como deseo jajaja, mi madre que era la agasajada quedo más que satisfecha con este delicioso dulce, y mi padre se coló para comerse unos cuantos, después de todo llevan toda una vida compartiendo absolutamente todo, y esta no iba a ser la excepción.

It’s really sad that you lost your mom a few days ago and this weekend was your mom’s birthday. The process of making the syrup was much better.

I think you misunderstood honey, I didn't lose her, I was about to lose her but thank God I didn't, I have her at home with me safe and sound.
