Hice estas ricas empanadas de cazón guisado y quería compartir la receta que aprendí de mi madre, a ella le daba gusto hacernos a todos en la casa empanadas, disfrutando de un buen momento. Les cuento como las preparé al estilo de mi mamá.

Made these delicious stewed dogfish empanadas and I wanted to share the recipe I learned from my mother, she enjoyed making empanadas for all of us in the house, enjoying a good time. I'll tell you how I prepared them in my mother's style.

Ingredientes:
Harina de maíz
Harina de trigo
Azúcar
Sal
Cazón guisado.

Ingredients:

Preparación

Lo primero es hacer la masa. Esta se prepara con harina de maíz. Yo coloqué 5oogrs de harina de maíz y 150 de harina de trigo, le añadí media taza de azúcar y una pizca de sal, agregué agua y amasé hasta lograr la consistencia adecuada, ni muy blanda ni dura.

Preparación

The first thing to do is to make the dough. This is prepared with corn flour. I put 5oo grs of corn flour and 150 grs of wheat flour, added half a cup of sugar and a pinch of salt, added water and kneaded until I reached the right consistency, neither too soft nor hard.

Luego de tener la masa y el relleno, que en este caso es cazón, inicio con una pequeña bolita de masa y la coloco en un plástico que me sirve de soporte donde hacer que esta bolita se extienda para colocar la masa.

After having the dough and the filling, which in this case is dogfish, I start with a small ball of dough and place it on a plastic sheet that serves as a support where I can make this ball spread out to place the dough.

Para este proceso hay que humedecer las manos y luego de tener el tamaño y de grosor fino le coloco el relleno.

For this process it is necessary to moisten the hands and after having the size and thin thickness I put the filling.

Después doy vuelta a la masa con el plástico y con un plato sobre esta mezcla corto para que me quede el medio circulo de forma perfecta. Y quito el resto de masa.

Then I turn the dough with the plastic wrap and with a plate over this mixture I cut it so that I have a perfect half circle. I remove the rest of the dough.

Cuando se hacen empanadas de varios rellenos mi madre les hacía huecos con el dedo meñique y sabía de qué relleno lo hacía según el número de huecos o sin ellos. Así aprendí de ella.

When making empanadas with various fillings, my mother made holes in them with her little finger and knew which filling she made according to the number of holes or without them. That's how I learned from her.

Luego las llevo al sartén bien caliente y las dejo dorarse por ambos lados.

Then I take them to a very hot frying pan and let them brown on both sides.

Como somos varios en la casa hay que hacer una buena cantidad para todos.

Since there are several of us in the house, we have to make a good amount for everyone.

Nos gusta que queden doraditas y disfrutarlas con un buen café caliente o café con leche.

We like them to be golden brown and enjoy them with a good hot coffee or coffee with milk.
