Today I bring you one of the most popular soups as a starter or hot dish for lunch.
The most popular way of eating it in Andalusia is the Sopa de Picadillo, so called because of the chopped eggs and ham added to the broth.
In the case of these pictures it is a broth made with chicken, beef and vegetables.
Para preparar este caldo de puchero, necesitamos:
- Apio.
- Zanahorias.
- Puerro.
- Nabo.
- Pollo o gallina.
- Huevos.
- Patatas.
- Hueso blanco.
- Jamón Ibérico en tacos pequeños.
To prepare this broth, we need:
- Celery.
- Carrots.
- Leek.
- Turnip.
- Chicken or hen.
- Eggs.
- Potatoes.
- White bone.
- Iberian ham in small cubes.
Paso1/Step:
Chop the vegetables and pour the water and all the ingredients into the pan. Except the ham.
Heat over medium heat for approx. 1 hour and a half. Add the well cleaned whole eggs to the pan to cook.
Paso2/Step:
Once the broth starts to boil, a foam usually appears on top of the meat. Remove it.
Paso3/Step:
After the cooking time has elapsed, the broth will be white and the vegetables will be tender.
Thin or extra thin noodles can also be heated in the meat or rice stock.
When ready to serve, add the chopped egg. One per person and the diced ham.
It is a perfect hot dish for winter days and with practically no fat 😉.
