Saludos amigos espero se encuentren muy bien, acá estoy nuevamente con una receta típica de la gastronomía venezolana y esta vez se trata de los deliciosos golfeados, que no son mas que un pan dulce en forma de caracol, de consistencia esponjosa y suave, relleno con papelón, queso y especies dulces. Este pan es magnifico para degustar con una taza café a la hora de la merienda, pero también cae bien para un desayuno rápido y variado; todo es cuestión de gustos.
Greetings friends I hope you are very well, here I am again with a typical recipe of Venezuelan cuisine and this time it is the delicious golfeados, which are nothing more than a sweet bread in the shape of a snail, spongy and soft consistency, filled with paprika, cheese and sweet spices. This bread is great to enjoy with a cup of coffee at snack time, but also goes well for a quick and varied breakfast; it's all a matter of taste.
Ingredientes:
1 1/2 taza de harina de trigo todo uso
1 cucharada de levadura instantánea
8 cucharadas de leche tibia
6 cucharadas de azúcar
1 1/2 cucharada de mantequilla
2 huevos
1 1/2 taza de papelón o panela rayado
Canela en polvo
2 tazas de queso blanco rayado
Ingredients:
1 1/2 cups all-purpose flour
1 tablespoon of instant yeast
8 tablespoons of warm milk
6 tablespoons sugar
1 1/2 tablespoons butter
2 eggs
1 1/2 cups of shredded papelón or panela (grated bread crumbs)
Powdered cinnamon
2 cups grated white cheese
Preparación/Preparation
Colocar la harina ya cernida en un tazón y luego agregar el azúcar
Place the sifted flour in a bowl and then add the sugar.
Seguidamente agregamos la levadura y revolvemos
Then add the yeast and stir
Realizar un pequeño orificio en el centro de la harina e incorporar la mantequilla
Make a small hole in the center of the flour and add the butter.
Añadir el huevo y comenzar a mezclar
Add the egg and start mixing
Luego agregamos la leche poco a poco mientras vamos mezclando
Then we add the milk little by little while we are mixing
Una vez se incorporen todos los ingredientes, pasamos la masa a la mesa enharinada y comenzamos el amasado por diez minutos continuos, luego la tapamos por una hora para que no le entre corriente de aire y pueda duplicar su tamaño
Once all the ingredients are incorporated, transfer the dough to the floured table and begin kneading for ten continuous minutes, then we cover it for an hour to avoid air currents and allow it to double in size.
Pasada la hora de reposo. llevamos nuevamente la masa a la mesa y comenzamos aplanar con nuestros dedos, de manera que esta saque el aire que pueda tener.
After the hour of rest, we take the dough back to the table and start flattening it with our fingers, so that it removes the air it may have.
Terminar de estirar la masa con el rodillo, tratando de hacer un rectángulo de medio centímetro
Finish stretching the dough with a rolling pin, trying to make a rectangle of half a centimeter.
Una vez tengamos la masa estirada, colocar mantequilla
Once we have the dough stretched, place the butter
Esparcir el papelón por toda la masa, dejando un centímetro en uno de los bordes son colocar nada del relleno.
Spread the papier-mâché all over the dough, leaving one centimeter on one of the edges without placing any of the filling.
Igualmente se coloca la canela el polvo
The cinnamon powder is also placed
Por ultimo se coloca el queso
Finally, place the cheese
Comenzar a enrollar la masa
Start rolling the dough
Al llegar al final colocamos un poquito de agua con nuestros dedos en la parte de la masa que dejamos sin relleno y así pegar esa parte al enrollado.
When we reach the end, we put a little water with our fingers on the part of the dough that we left without filling and thus stick that part to the rolled out dough.
Luego marcamos los trozos en la masa, colocando dos de nuestros dedos para que los golfeados queden de un mismo tamaño.
Then we mark the pieces in the dough, placing two of our fingers so that the golfeados are of the same size.
Una vez cortados. los llevamos a la bandeja previamente enmantequillada
Once cut, we put them in the previously buttered tray.
Colocar el segundo huevo en una taza y añadir el papelón rayado, batir fuertemente para formar especie de crema
Place the second egg in a cup and add the grated paprika, beat strongly to form a kind of cream.
Barnizar los golfeados con la mezcla que recién preparamos
Varnish the golfeados with the mixture we just prepared.
Agregar nuevamente queso por encima y dejar reposar por espacio de treinta minutos para que estos puedan crecer.
Add cheese again on top and let stand for thirty minutes so that the cheese can grow.
Pasados los treinta minutos, introducir la bandeja al horno previamente calentado y dejar cocinar por veinte minutos a 170 grados.
After thirty minutes, place the tray in the preheated oven and cook for twenty minutes at 170 degrees.

This is the result when they come out of the oven
Sin dejar enfriar volvemos a colocar queso por encima de cada golfeado y ya estarán listos para comer.
Without letting them cool, place cheese on top of each golfeado and they are ready to eat.
