Meat lasagna with vegetables, pleasing my husband. / Lasaña de carne con vegetales, complaciendo a mi esposo. (Eng/Esp)

Greetings dear Hive community, today I am going to share with you a craving of my husband, he is a pasta lover and this week he craved a lasagna with eggplant, I particularly like to prepare meat with lots of vegetables, but today I only had zucchini and eggplant, so to please the king of the house I got down to work.

Saludos querida comunidad Hive, hoy les voy a compartir un antojo de mi esposo, él es un amante de la pasta y esta semana se antojó de una lasaña con berenjenas, por lo particular a mí me gusta preparar la carne con muchos vegetales, pero hoy solo contaba con calabacín y berenjena, así que para complacer al rey de la casa me puse manos a la obra.

Ingredients (for 6 portions).

  • 1 kg of eggplants (2 large and 1 medium).
  • 200 gr of lean ground beef.
  • 240 ml of homemade tomato paste.
  • 1 zucchini.
  • 1 chopped onion.
  • Pasta for lasagna.
    For the béchamel sauce
  • 1 ¼ liter of milk.
  • 1 finely chopped onion.
  • 2 tablespoons margarine.
  • 3 heaped spoonfuls of cornstarch.
  • Salt, sugar and nutmeg to taste.

Ingredientes (para 6 porciones).
• 1 kg de berenjenas (2 grandes y 1 mediana).
• 200 gr de carne magra molida.
• 240 ml de pasta de tomate casera.
• 1 calabacín.
• 1 cebolla picada.
• Pasta para lasaña.
**Para la salsa bechamel **
• 1 ¼ litro de leche.
• 1 cebolla finamente picada.
• 2 cucharadas de margarina.
• 3 cucharadas colmadas de maicena.
• Sal, azúcar y nuez moscada al gusto.

Procedure:
The first thing I did was to peel the eggplant and chop it lengthwise into thin slices and left them in salted water for 10 minutes, to remove the acid and spiciness, after that time I drained them and roasted them over medium heat on both sides the large eggplant slices, the medium one I chopped into small squares along with the zucchini.

While the eggplant slices were roasting, I heated the tomato paste in a pot with the meat previously seasoned with onion, garlic, parsley and ground parsley, over medium heat for 20 minutes and then I added the chopped eggplant and zucchini, I let it cook for 10 more minutes.

Procedimiento:
Lo primero que hice fue pelar la berenjena y picarla a lo larga en lonjas finas y las dejé en agua con sal por 10 minutos, para quitarle el acido y lo picoso, pasado el tiempo las escurrí y las ase a fuego medio por ambos lado las longas de las berenjenas grandes, la de la mediana la piqué en cuadritos pequeños junto con el calabacín.

Mientras se asaban las lonjas de berenjenas, en un caldero puse a calentar la pasta de tomate junto con la carne previamente aderezada con cebolla, ajo, perejil y orejano molido, a fuego medio por 20 minutos y posteriormente le agregué la berenjena y el calabacín picados, dejé cocinar por 10 minutos más.

To prepare the béchamel sauce I heated the margarine over low heat, then I added the onion, continued cooking over low heat until it whitened, then I added the cornstarch and then a little milk, stirring to prevent lumps from forming, then I added the rest of the milk and continued cooking stirring constantly, I added salt, sugar and ground nutmeg to my taste and continued cooking until it boiled.

Para preparar la salsa bechamel puse a calentar la margarina a fuego lento, posteriormente le agregué la cebolla, seguí cocinando a fuego lento hasta que blanqueció, luego le incorporé la maicena y luego un poco de leche revolviendo para evitar que se formaran grumos, seguidamente agregué el resto de la leche y seguí cocinando revolviendo constantemente, le coloqué sal, azúcar y nuez moscada molida a mi gusto y seguí cocinando hasta hervir.

In a rectangular baking dish place enough bechamel sauce to cover the base, then place a layer of lasagna pasta, a layer of bechamel sauce and a layer of ground beef.

Armado de la lasaña.
En una bandeja refractaria rectangular coloque suficiente salsa bechamel para cubrir la base, luego coloque una capa de pasta para lasaña, una de salsa bechamel y una de carne molida.

Then I covered the meat with the roasted eggplant slices and placed again a layer of bechamel sauce, one of meat and one of pasta, to finish I covered with the rest of the bechamel sauce and put it in the oven for 30 minutes covered and then 5 uncovered.

Posteriormente cubrí la carne con las lonjas asadas de berenjena y le coloqué nuevamente una capa de salsa bechamel, una de carne y una de pasta, para finalizar cubrí con el resto de la salsa bechamel y lleve al horno por 30 minutos tapado y luego 5 destapado.
