We planned for a birthday outing for my firstborn so he can hang out longer with his friends for his birthday.
Before this, he has been asking me to bake some cupcakes. We used to do it when he was younger though we have not done it for a long time. This boy baked with me since his 3rd birthday when he tried baking a brownie cake with me. Now he is 7! Almost every year during his birthday, we try to bake something because he never fancy the cakes outside, so very often, we go back to what he likes. Back then, I was just starting to bake.
But I was feeling lazy and the oven is already too old to bake further as the last we baked, there was burnt smell coming from it so I figured it is no longer safe to be used.
Hence I delayed and delayed until I was trying to figure what food to bring for this little outdoor outing. A bit too late for me to order any cupcakes from any local baker. I checked the cupcake recipes online. Though it is usually manageable, I thought let's keep it simple this time by getting a cupcake premix!!!!
Yes Cupcake Premix from a nearby bakery supply shop saved the day!!! As simple as 1, 2, 3!
It even comes with simple instructions. When I saw this, i knew yes this is it -3 steps of baking! Our time to bake was not long because he has some school homework to finish.
The ingredients needed were only these:
🎂4 eggs
🎂250gm butter
🎂80 ml water
🎂The cupcake mix
First, we whisked up the softened butter. I took the butter out from fridge to let it soften to room temperature so it is easier to work with.
Next, we added in the 4 eggs.
We also added in water.
Final ingredient to be added in was the cupcake mix.
Then, stir it all together. Supposedly we need to use whisk but I could not find ours in a rush so we used spatula before I got my electric mixer to mix it more thoroughly. He sprinkled in some chocolate chips too.
I helped to scoop the batter out into cups and keep the cups on some silicone muffin tray to be placed into the air fryer since our oven is not safe. We baked it at 150 degree Celsius for 20 minutes instead of 30 minutes. I poked with a toothpick to check that the batter is all dried.
The batter was enough to yield for 17 cupcakes. We brought 15 of them to the outing as the container could only fit that much haha.

The cupcake mix was actually yummy and not too sweet as I got these feedbacks from those who ate.
The next day, I heated up the 2 leftovers at home for breakfast and did a simple chocolate frosting on top of them.
My youngest enjoyed sprinkling the colourful sprinklers on his. He enjoyed it so much!
I let the eldest bring one to school for his snack and he came home asking for me. Looks like we need to have another baking session soon, don't you think so? Good to see them enjoying food and making them too!
