Mi almuerzo de hoy: Sopa de arvejas amarillas / My lunch today: Yellow pea soup

Les saludo mis amigos, hoy se me ocurrió cocinar una sopa de arvejas amarillas que me quedó deliciosa.

I greet you my friends, today it occurred to me to cook a yellow pea soup that was delicious.

Para esta sopa saludable esto es lo que necesitas:

Ingredientes: / Ingredients:
• 300 gr de arvejas amarillas (remojadas desde la noche anterior)
• 3 tallos de cebollín completo picado fino
• 1 tallo de celery sin hojas picadito
• 1 cucharadita de orégano fresco picado
• 2 dientes de ajo picado fino
• 3 ajíes dulces de diferentes colores (verde, rojo y amarillo) finamente picados
• ½ zanahoria picada en ruedas finas
• ½ cucharadita de bicarbonato
• 1 cucharada de margarina o mantequilla
• Sal y pimienta al gusto

• 300 gr of yellow peas (soaked from the night before)
• 3 stalks of whole chives, finely chopped
• 1 celery stalk without leaves, minced
• 1 teaspoon fresh oregano, minced
• 2 cloves of garlic, finely chopped
• 3 sweet peppers of different colors (green, red and yellow) finely chopped
• ½ carrot chopped into fine wheels
• ½ teaspoon of baking soda
• 1 tablespoon margarine or butter
• Salt and pepper to taste

Preparación: / Preparation:
Colar las arvejas que pusimos en remojo toda la noche, enjuagarlas y ponerlas en una olla con agua que las cubra y con ½ cucharadita de bicarbonato.

Strain the peas that we soaked overnight, rinse them and put them in a saucepan with water to cover them and with ½ teaspoon of bicarbonate.

Las hervimos a fuego bajo hasta que se suavicen, luego colamos y reservamos.

We boil them over low heat until they soften, then strain and reserve.

En una olla ponemos la margarina a calentar y echamos uno por uno el cebollín, el celery, el ajo, la zanahoria, los ajíes dulces y el orégano. Mezclamos con una cuchara y dejamos sofreír por unos minutos.

In a pot we put the margarine to heat and add the chives, the celery, the garlic, the carrot, the sweet peppers and the oregano one by one. Mix with a spoon and let it fry for a few minutes.

Ahora echamos las arvejas, la sal y la pimienta y revolvemos para que absorban el sabor de los vegetales, como dos minutos, luego cubrimos con agua, tapamos la olla y cocinamos la sopa a fuego bajo hasta que quede cremosa.

Now we add the peas, salt and pepper and stir so that they absorb the flavor of the vegetables, about two minutes, then cover with water, cover the pot and cook the soup over low heat until it becomes creamy.

Servimos acompañada de unas ricas arepitas asadas. ¡Buen provecho mis amigos!

Nota: las arvejas, sean amarillas o verdes, son ricas en potasio, fósforo, calcio, hierro, vitamina A, bajan el colesterol y la presión arterial.

Note: peas, whether yellow or green, are rich in potassium, phosphorus, calcium, iron, vitamin A, they lower cholesterol and blood pressure.
