Simple Adobong Kangkong and Tofu Recipe

TOFU
It's one of those ingredients that you either hate or love. I belong to the later group: the tofu lovers. It has been a staple in my kitchen since I was young. It became even more prominent in the dishes that I make when I turned #vegetarian as I looked for meat-replacement in my cooking.

Tofu comes from soybeans and is made by curdling soy milk and separating the curds from the whey. It contains protein, fat, isoflavones, calcium and carbohydrates - healthy stuff! Isoflavones, for example, are phytoestrogens that can reduce the risk of osteoporosis, heart disease, and some types of cancer.

Looking at its vitamins and mineral content, we can see that it is a rich source of iron, magnesium, copper, phosphorous, and a good amount of calcium and potassium. If you want to geek out over the details of its nutritional content, you may see it here; from the U.S. DA's very thorough database.

GOOD EFFECTS
According to organicfacts.net, tofu reduces the cholesterol level in the body, maintain cardiovascular health, manages weight, eases menopause symptoms, contains anti-cancer properties, prevents osteoporosis, helps manage diabetes, good for the kidney, improves memory, helps prevent anemia, hair loss and liver damage, is a good source of protein, and helps in the treatment of gout.

BAD EFFECTS
On the negative side, most tofu out in the market are GMOs and have been known to cause gut damage. Those suffering from thyroid problems are advised to avoid tofu, especially children born with congenital hyperthyroidism. Women with family history of breast cancer are advised to avoid taking it as excess intake of tofu may block the natural production of estrogen. Lastly, don't take tofu if you are allergic to it.

Personally, I believe that the good effects outweigh the bad, so I continue to use it in my everyday cooking. Plus, it is easily available here in the Philippines where I live and I get to help the local producers who make tofu. #buylocal

COOKING WITH TOFU
After getting tofu from the market, I made a couple of wonderful dishes with it. Here's one of them. My own version of #AdobongKangkong. Kangkong, otherwise known as WaterSpinach or ChineseSpinach, is also nutritious and is used to treat diabetes, high blood pressure and jaundice. I hope you like it, here goes...

INGREDIENTS
Kangkong (one bunch)
(Tofu) (one block)
Ginger
Flaxeed (1 and 1/2 teaspoon)
Cooking Oil(3 tablespoons)
Soy Sauce (3 tablespoons)
Cane Vinegar (1 tablespoon)
Water(1/4 cup)
Salt & Pepper
Sugar
Spanish Paprika
Cayenne
Mushroom Powder (or MSG)

PROCEDURE
1.Heat vegetable oil and saute ginger in low to medium heat . After 15 to 20 seconds, add in the cubed tofu and fry until golden brown. Add a dash of salt and pepper and a small amount of sugar.
2.Add the kangkong stems, soy sauce, cane vinegar and stir-fry for around 30 seconds.
3.Add in the kangkong leaves, stir and cover for 1 minute.
4.Add in water and cover for another 1 minute.
5.Add in a small amount of the following: salt, pepper, Spanish paprika, cayenne and mushroom powder. Adjust to your desired taste.
6.Stir in the flaxseed, remove from heat and serve immediately for best tasting result.

I ended up getting extra food and eating more than I should. So, I had more than enough energy walking around for my daily activities. It was a good meal, which I liked eating with steamed white rice.
