Red borscht is a very healthy, nutritious dish. In this post, I will tell you how to make it according to my mother's recipe.
Broth
We start by making the broth. Put vegetables, meat, and spices in a pot and pour water over it. Everything has to boil and then we cook it for about an hour.
Ingredients:
carrot
parsley
celery
2 chicken thighs or half a chicken (remove skin)
2 bay leaves
4 pieces allspice
Barszcz czerwony jest bardzo zdrowym, pożywnym daniem. W tym poście napiszę wam jak go zrobić, według przepisu mojej mamy.
Bulion
Zaczynamy od zrobienia bulionu. Warzywa, mięso i przyprawy wkładamy do garnka, zalewamy wodą. Wszystko musi się zagotować, a następnie gotujemy ok. godziny.
Składniki:
marchew
pietruszka
seler por
dwa udka, albo pół kurczaka (zdjąć skórę)
2 liście laurowe
4 sztuki ziele angielskie
We strain the broth. Now it's time for beetroot. We need about 1- 1.5 kg of beets. We wash them, peel them and grate them on a large-mesh grater (thanks to this, the beetroot flavor penetrates better into the soup).
Przecedzamy bulion. Teraz pora na buraki. Potrzebujemy ok. 1- 1,5 kg buraków. Myjemy je, obieramy i ścieramy na tarce o dużych oczkach (dzięki temu smak buraków lepiej przenika do zupy).
Pour the decoction over the beets, add the marjoram - a heaped spoon, 2-3 cloves of garlic and cook the soup over low heat for about half an hour.
Wywarem zalewamy buraki, dodajemy majeranek - łyżkę czubatą, 2-3 ząbki czosnku i gotujemy zupę na mniejszym ogniu ok. pół godziny.
Finally, squeeze the lemon juice and add a little citric acid. The finished borscht looks like this. My favorite addition to borscht are dumplings with meat (made by myself). Stuffing for the dumplings is made of the meat of the soup minced by a mincer, 1 hard-boiled egg, and a soaked bun.
Na koniec wyciskamy sok z cytryny i dodajemy trochę kwasku cytrynowego. Gotowy barszcz wygląda tak. Moim ulubionym dodatkiem do barszczu są uszka z mięsem (samodzielnie robione). Farsz na uszka robi się z mięsa z zupy zmielonego przez maszynkę, 1 jaja ugotowanego na twardo i namoczonej bułki.

Czosnek to podstawa, ale moja małżonka twierdzi, że rozgniatanie czosnku do barszczu czy do żurku to profanacja 😉 a niej jej tam będzie.
Myślę, że fajnie być otwartym również na inne rozwiązania ;) Ja na przykład barszcz czerwony lubię jeść z rozgniecionym czosnkiem, a żurek wolę z całymi kawałkami.
