Hello dear friends who love cooking and good food, I hope you are well. Today I am excited to participate again in the Hive Creative Contest organized by @zord189 in collaboration with @foodiesunite. I take this opportunity to invite @linita, @carolinacardoza and @marytp20 to participate and share their recipes with us.
The main ingredient of this edition is RICE. Rice is one of the most consumed cereals worldwide. It is a great source of energy and has a good nutritional value as it is rich in vitamins and minerals, besides having a very low amount of saturated fats and cholesterol, so it is considered a healthy food for the heart.
El arroz chaufa se encuentra presente en la gastronomía peruana desde hace muchos años, pero aún sigue vigente. Es muy popular encontrarlo en la carta de los restaurantes más sencillos como en los más lujosos.
Su variación depende de los ingredientes que acompañan al arroz, que puede incluir pollo, pescado, carne, cecina y chorizos. Para esta ocasión lo voy a preparar de pollo y chorizo ya que es mi favorito.
To participate in this contest where rice is the main protagonist, I decided to prepare an Arroz Chaufa with chicken and chorizo. This is a very popular dish here in Peru. The origin of the dish dates back to the time when there were migrants of Chinese origin in this country, it is said that the Chinese prepared a dish with the rice rations they received daily and the leftovers from the previous day, which could be meat or fish. After frying the rice with butter, they mixed it with the leftovers and finally they painted it with "Sillao" or soy sauce.
Chaufa rice has been present in Peruvian gastronomy for many years, but it is still very popular. It is very popular to find it in the menu of the simplest restaurants as well as in the most luxurious ones.
Its variation depends on the ingredients that accompany the rice, which can include chicken, fish, meat, jerky and sausages. For this occasion I am going to prepare it with chicken and chorizo as it is my favorite.
- 2 Tazas de arroz blanco
- 1 Pechuga de pollo cortada en trozos pequeños
- 1 Chorizo
- 1 Cebolla mediana
- 2 Pimientos rojos
- Unas ramas de cebollín
- Salsa de soya
- 2 Huevos
- 2 cups of white rice
- 1 chicken breast cut in small pieces
- 1 Chorizo sausage
- 1 medium onion
- 2 red peppers
- A few sprigs of chives
- Soy sauce
- 2 eggs

The first thing to do is to cook the rice and let it cool. To do this, place the rice in a saucepan with a little oil and a teaspoon of salt. It is taken to the fire and it is moved with a paddle until most of the grains have changed their color to a slightly darker tone. Then add 3 cups of water at room temperature and let it simmer.

Then proceed to season the chicken breast with the spices and seasonings. Then set aside while the rest of the ingredients are cut.

- Cúrcuma
- Pimiento rojo
- Caldo de pollo en polvo
- Garlic sauce
- Salt
- Cumin
- Turmeric
- Red bell pepper
- Powdered chicken broth

Finely chop the onion, bell bell pepper and scallion. The scallion leaf should also be finely chopped.

Place the frying pan on the fire with a little butter, then place the onion and chives to sauté for about 5 minutes. Then add the chicken and let it cook for about 20 minutes over medium heat until the chicken is well browned.

Next, fry the chorizo previously chopped into small pieces.

Beat the two eggs to make an omelet.

After all the ingredients are cooked, proceed to mix them with the rice, adding each ingredient little by little.

Then add the soy sauce and stir well until all the rice is painted and it turns from a white rice to a dark color.

Finally, add the chopped chives, stir and remove from heat. The chive leaves should not be cooked too much, so that it keeps its texture.

Finally, serve with the omelet, usually the omelet is mixed with the rice, but for this presentation I used it as a decoration to present the dish.
It was really a pleasure for me to prepare this dish that I learned to make in this country but always putting my personal touch without forgetting my roots.
