“Meat Dumplings and Cabbage Winter Pot 肉団子とキャベツの冬鍋” [English and Japanese]

“Meat Dumplings and Cabbage Winter Pot”

I love winter pot food. I made dumplings and a cabbage pot the other day. I think I was inspired by a stew story by @akipponn the other day. (https://hive.blog/hive-120586/@akipponn/new-series-soup-stories-and-spanish-bread-soup) Additionally, the weather is getting colder day by day.

In Japan, people often eat a pot meal called “Nabe Ryouri (鍋料理)” in cold winter. You can put vegetables, meat, fish, tofu, mochi, and so on in the Nabe. Nabe is very nutritious and delicious. Also it’s easy to cook! Dashi soup is a key part for cooking Nabe. People often use salt, fish, meat, kimchi, or kelp for dashi soup. There are many different styles of Nabe meals.

Sometimes, people eat “Yami Nabe (闇鍋)” as a surprise pot meal for fun parties. “Yami” means darkness. They gather many different foods and put everything in the same pot. People don’t know what’s inside it. They enjoy the thrill or excitement of unknown textures. To be honest, I don’t really like Yami Nabe because it’s not tasty if someone put strange food like chocolate or something. Anyway, I made a delicious vegetable and meat dumpling pot this time. It made me calm and cozy.

“肉団子とキャベツの冬鍋”

肉団子とキャベツの鍋料理を作りました。きっと日に日に寒くなってきたのと @akipponn さんのスープの記事(https://hive.blog/hive-120586/@akipponn/new-series-soup-stories-and-spanish-bread-soup) に感化されたのだと思います。

鍋には肉、魚、野菜、豆腐、餅などなどいろんな物を入れる事ができます。鍋はとても栄養価が高くおいしいですし、なにより簡単に作ることができます。鍋は出汁がきめてとよくいいますね。塩、魚、肉、キムチ、昆布などいろんな出汁があります。

みんなで持ち寄った思い思いの材料を同じ鍋に入れて作る闇鍋もあります。中に何が入っているのかわからないスリルや興奮を楽しむという物です。正直言ってわたしは闇鍋は好きではありません。チョコレートなど合わない物を入れられてしまう可能性もあるので。今回はおいしい肉団子と野菜の鍋を作りました。身体が温まり落ち着きました。

Ingredients

・Cabbage 1/2
・Mushrooms 6-8
・Carrot 1
・Baby bok choy 1-2 bunches
・Tofu 1 pack
・Shrimp 6-10
・Garlic 6-8 pieces

Soup

・Water 1000-1300cc
・Cooking sake 2 tablespoons
・Mirin (sweet sake) 2 tablespoons
・Chinese chicken stock 2-3 teaspoons
・Salt to taste
・Sesame oil to taste
・Black pepper to taste

Meat dumplings

・Ground beef (pork or chicken is fine. For vegetarian, you don’t need to put this) 250g-300g
・Oyster sauce 2 tablespoons
・Sugar 2 teaspoons
・Sesame oil 2 tablespoons
・Onion 1/2
・Starch powder 1-2 teaspoons

The cooking time is about 30-40 minutes including the preparation time.

材料

・キャベツ 1/2
・きのこ 6〜8個
・にんじん 1本
・チンゲン菜 1〜2房
・豆腐 1パック
・海老 6〜8尾
・にんにく 6〜10かけ

スープ

・水 1000cc〜1300cc
・料理酒 大さじ2
・みりん 大さじ2
・中華スープの素 小さじ2〜3
・塩 少々
・ごま油 少々
・黒コショウ 少々

肉団子

・牛肉 (豚肉または鶏肉でもよい。ベジタリアンの方は肉なし)250g〜300g
・オイスターソース 大さじ2
・砂糖 大さじ2
・ごま油 大さじ2
・玉ねぎ 1/2
・片栗粉 小さじ1〜2

調理時間は準備時間も含め約30分〜40分。

  1. Peel onion and cut it into small pieces.
  2. Put in a small bowl, add starch, mix it, and leave it for a while.
  3. Put meat in a bowl.
  4. Add all seasonings (oyster sauce, sugar, and sesame oil) and mix it well.
  5. Make small dumplings.

1、玉ねぎの皮をむいて、みじん切りする。
2、小さなボールに入れ、片栗粉をまぶし、よく混ぜてしばらく置いておく。
3、肉をボールに入れる。
4、全ての調味料(オイスターソース、砂糖、ごま油)を加えてよく混ぜる。
5、小さな団子を作る。

  1. Pour water into a big pot.
  2. Add cooking sake, mirin, and Chinese chicken stock.
  3. Boil it.
  4. Add meat dumplings.
  5. After the meat dumplings float, add garlic.

1、大きな鍋に水を入れる。
2、料理酒、みりんと中華スープの素を入れる。
3、火にかけて沸騰させる。
4、肉団子を入れる。
5、肉団子が浮いてきたら、にんにくを入れる。

  1. Add shrimp.
  2. Add carrots.
  3. Add mushrooms.
  4. Add baby bok choy.
  5. Add cabbage.
  6. Add tofu.

1、海老を入れる。
2、にんじんを入れる。
3、きのこを入れる。
4、チンゲン菜を入れる。
5、キャベツを入れる。
6、豆腐を入れる。

  1. After cooking well, add salt and pepper.
  2. Add sesame oil.
    If you want to add glass noodles, mochi, or more, that would be good.

1、よく煮込んだら、塩こしょうする。
2、ごま油を回し入れる。
春雨、モチなどを加えてもおいしいです。

I had it with rice, kimchi and cucumber pickles. Delicious!! If you like to add udon or ramen noodles after eating some, that would be good too. Also, you can cook risotto with this soup as well. This makes me crave a pot stew again.

ご飯、キムチときゅうりの漬物と一緒にいただきました。おいしかったです!うどんやラーメンをしめに入れてもいいですし、スープを使ったおじやもおいしいです。また食べたくなってきました。

I love hot pots! So easy to make, and beautiful to look at, and perfect warming winter food! I only wish I could find mochi in the Asian stores here, but it seems to be impossible. Sometimes they have frozen "ice cream mochi" but I think that's not the kind I should put in the pot 😹
