"Sweet Red-Bean Soup- Oshiruko"

I made sweet red-bean soup called Oshiruko or Shiruko in Japanese. I used organic Adzuki beans and gluten-free sweet white rice flour. It was good but I should've made the mochi (dumplings) a little bit softer. Oshiruko was eaten by people in the Edo period around 1635 but the main seasoning was salt and they put sugar on the top of the soup. It was a light snack after parties. We have a sweeter taste nowadays. Anyway, the weather in Nova Scotia, Canada is getting cooler and cooler day by day so, it was a nice autumn taste.

おしるこを作りました。有機栽培の小豆とグルテンフリーの餅粉を使用しました。美味しかったのですが、もちをもう少し柔らかく作ればよかったと思います。江戸時代の寛永12年(1635年)から人々は宴会後などに出される間食として食べていたそうです。現在のような甘いしるこではなく塩ベースの味で、お椀によそった上から砂糖をのせて食べていたようです。カナダのノバスコシア州は日に日に寒くなってきたので、秋のおしるこの味はおいしかったです。

Ingredients 材料

Oshiruko Soup  おしるこ

・Adzuki beans-150g 小豆ー150グラム
・salt -1/3 tablespoon  塩ー小さじ1/3
・brown sugar-120g ブラウンシュガー 120グラム
・water -1000cc 水ー1000cc

Mochi (dumplings) もち

・Gluten-free sweet white rice flour-1/2 cup グルテンフリー米粉ー1/2カップ
・Starch flour- 1 spoon 片栗粉ー大さじ1
・Salt- one pinch 塩ーひとつまみ
・Water- 80-100cc 水ー80から100cc

  1. Soak Adzuki beans in water for a while.
  2. Boil for 15-20 minutes on medium heat.
  3. After draining the water, pour in spring water and boil for 30 minutes until the Adzuki beans will become totally soft at first at medium heat and then at low heat.
  4. Put brown sugar and salt into the pot and boil for about 10 minutes until the soup becomes melty.
    1.  小豆を少しの間水にさらします。
    2.  15ー20分くらい中火で煮ます。
    3.  ざるにあげて水を捨てた後、もう一度水を注ぎ小豆が完全に柔らかくなるまで30分ほど煮込みます。
    4.  ブラウンシュガーと塩を加えてからさらに10分くらいとろみが出るまで煮込みます。

  1. Mix rice flour and starch flour and pour in water little by little.
  2. After pounding, make round shapes.
  3. Put them into boiling water for about 5 minutes.
  4. After dumplings start floating, soak them in cold water for a while.
    1. 米粉と片栗粉を混ぜ水を少しずつ注ぎます。
    2. こねたら団子の丸の形を作ります。
    3. 沸騰したお湯に団子を入れて、5分くらい表面に浮いてくるまで煮ます。
    4. 少しの間水にさらしてしめます。

It was not very sweet but was delicious. I will make softer dumplings next time for sure!
甘すぎず美味しかったです。次はもう少し柔らかいもちにします!

おしるこは子供達も大好きで時々作ります。
そうですよね、冷えてきましたものね、おしるこいいですね。
私も作ることにします!

おしるこ体が暖まりますよね!こっちは寒いです〜。おしるこ、お子さんたちも好きですか!お菓子のようなご飯のような特別な感覚になる食べ物ですよね。

Now this is something I've made! Well... not the mochi part, but I have boiled azuki beans before to make the soup. It is so good, especially without much sugar. I should try to make mochi to add next time. Hmm...maybe I should make soon!

Thank you! I love the bitter taste one as well. Actually, this one was a little bit bitter. It wasn't a very sweet one. I wanted to put pumpkin as well but I didn't. Maybe next time, I will put mochi and pumpkins.
