  • Mash 1 very ripe banana... Add the juice of 1/2 lemon to the puree to prevent it from acquiring a dark color. Reserve to use in the final step.

  • In a bowl add 2 eggs and 1 cup of sugar, beat at "high" speed for approximately 8 minutes or until we check that the sugar is completely integrated with the eggs and we achieve a homogeneous mixture without lumps.

  • Mix 2 cups of wheat flour with 1 teaspoon of cinnamon powder and 1 teaspoon of baking powder (previously sifted). We will mix in an enveloping way until well integrated.

I find banana bread to be one of the easiest and most forgiving #recipes in my arsenal... but I never considered GINGER as a complimentary flavour!
