MONDAY FOOD DELIGHT: PREPARING TRADITIONAL NEPALI SEKUWA

Sekuwa is one of the traditional dish of Nepal and is also a popular street food. It is basically a meat combined with various ingredients, then skewered and then roasted in burning charcoal. It can be of chicken, goat, pork, buff or lamb or a mixture of these. As per history, it was a popular food in eastern part of Nepal and originated from Sunsari district. The food is similar to like that of chicken barbecue. It is best taken with Chutney (pickle). I had chicken sekuwa for today. You can have any meat and the cooking process is same whether you make lamb or pork sekuwa.

Ingredients

  • Chicken meat
  • Curd
  • Sekuwa Masala (Available on Amazon)
  • Lemon Juice
  • Cumin Powder
  • Coriander Powder
  • Grinded Sichuan Pepper
  • Grinded Black Pepper
  • Ginger Garlic Paste
  • Mustard Oil
  • Salt
  • Chicken Masala or Meat Masala (Available on Amazon)
  • Turmeric Powder

Cooking Method

  • The first step is to marinate the meat by mixing it with all above mentioned ingredients: salt, turmeric powder, cumin powder, coriander powder, grinded Sichuan pepper and black pepper, curd, mustard oil, lemon juice, chicken masala, ginger-garlic paste and sekuwa masala. Mixed it uniformly with hand and cover it. Then place it aside for 30 minutes in a refrigerator.

  • Take a skewer rub it with oil and then pierce a piece of meat into them maintaining at least some distance between each pieces. You can place capsicum in the middle of each meat if you like but I just hate that.

  • Sekuwa is prepared in burning wood fire or charcoal. But as I don't have all those in my home currently, I prepared that in electric barbecue grill. Furthermore, I think its unhealthy to eat anything that's prepared in fire due to the smoke. Cooking in electric equipment is healthy. Rub the stainless steel with some oil so that meat won't stick to it and then place the skewers in the same. But you should let the equipment heated for sometimes before placing skewered meat.

  • Roll the stick from time to time so that all part gets cooked. While cooking, you can see some red liquid dropping out of the meat into the chromium plate that's just below the stainless steel. That's a good sign. Eat only after those red liquid is drained completely. You can simply know whether its cooked or not by looking or smelling or gently touching the meat surface.

  • When sekuwa is ready, you can add some lemon juice from the top and then have it with tomato pickle. To prepare the pickle, put some tomatoes, salt, Sichuan pepper, green chili and fresh coriander into your grinder and then grind it with the help of mixture. Well I get only three sticks out of nine🤣😂.

Oh man, you're making me hungry with this one. It definitely looks incredible. I've gotta try it one day, maybe I may make my own, but I would love some authentic ones someday.
