Jackfruit-Coconut Pie Recipe

Good day Hivers! Time for another sugary taste? Now let's prepare a dessert called Jackfruit-Coconut Pie which is also famous and great as a food souvenir. Are you ready? 😉

Ingredients:

  • 2 cups all-purpose flour
  • ⅓ cup butter room temperature but still cold( diced it to small portions )
  • 1 teaspoon salt
  • ⅓ cup vegetable shortening ( Lard ) room temperature but still cold as well diced to small portions
  • 6 to 8 tablespoons cold water
  • ¼ cup Langka shredded
  • 2 cups young coconut meat
  • ¾ cup granulated white sugar
  • ½ cup cornstarch diluted in ½ cup young coconut water
  • All purpose cream or evaporated milk ( I used the all purpose cream )
  • grated cheese

Make the pie crust by mixing the flour, salt lard and butter until the texture turns like crumbs.

Gradually add cold water up to 6 tablespoons of cold water and estimate when the mixture becomes well incorporated, do not add the remaining water. Do not knead, just mix all the ingredients thoroughly and put in the fridge for at least 30 minutes wrapped in cling film.

While waiting for the dough to set, cook the jackfruit fillings. On low heat fire, put all purpose cream and sugar then mix. Do not boil too much then add the coconut meat. Just simmer a little and pour the coconut water mixed with cornstarch, then add the Jackfruit. When the consistency is sticky, remove and refrigerate.

At this point we can flatten the dough in the fridge. Divide the dough into two parts and flatten with a rolling pin. It needs to be flattened according to the baking pan to be used, then place the flattened dough in the pan.

Cut the excess at the edge of the pan according to the design you want then just cut the extra dough.

Prick the bottom of the dough with a fork to absorb moisture from the fillings.

Then put the chilled jackfruit-coconut fillings. Align in the middle and cover with the second dough from the divided dough earlier. It should also be flattened like the first dough.

Seal the edges of the first and top dough so that the fillings do not come out and also apply the design using a fork or the design you want. Use a fork to create small holes by pricking the middle of the pie with the fillings.

Then coat with the egg wash mixture (egg and milk mixture) on top surface.

Bake in a preheated oven at 180°C and cook for 50 minutes but before 50 minutes end, put grated cheese on top of the pie for more flavor.
