Stuffed Calamari With Creamy Sauce

Welcome Back to my Cooking Lab!

It's late night and I am hungry. So, I decided to make stuffed calamari since I have some calamari and also leftover vegetables. I was trying to do the Italian way but there are some unavailable ingredients. By the way, if you love seafood, you'll love this recipe!

Ingredients

  • Chopped watercress (you can replace it with other vegetables)

  • 5 calamari, cleaned and chopped the tail

  • 50gr ground beef

  • 2 cloves of garlic, minced

  • chopped scallion

  • Spices (cayenne pepper, rosemary, basil, pepper,salt) feel free to customize

  • 1 egg

  • Olive oil to pan grilled


Sauce

  • two tbsp mustard

  • 1 cup milk

  • 1 tbsp flour

  • 1 tbsp butter

  • Salt & pepper to taste

Clean the calamari. Mix ground beef and the chopped tail together.

Saute the garlic. Then add minced beef and the chopped tail from calamari. Cook until it changes its color.

Add chopped vegetables into the mixture. Stir well and let them cook.

Let the mixture cool. Then add the egg into the mixture. Prepare toothpick as well.

Fill up the calamari and secure it with toothpick.

Steam the calamari for 25-30 minutes

Then pan-grilled the calamari for 10 minutes until it changes its color.

Make the sauce by tossing all the sauce ingredients together.If you still have the leftover from the filling, add them in. Cook until it thickens and boil.

If you want to add more cream, use cream but it's optional. You can eat it with rice or just have it as is. I like mine as is without rice.

But after chopping the calamari because of aesthetic reason and also more insight to the filling, here's how it looks like.

If you want more aesthetic look, you can bake them instead pan grilled. But since it's 1 AM, I was choosing the quickest way for me to enjoy a filling meal. This is also a meal to impress. So if you have friends or your date coming over, try this meal!

Note : If you want to have more watery sauce, use a bit of water. I like thick sauce, so I didn't use that.

Note : you can always stuff the filling with something else like bacon or shrimp. Since I don't have them and only beef, I use it. Anyhow, see you on my next cooking and discovery!

Wow, my husband loves squid but the only recipe he cooks with it is Adobo.. While my daughter only eats squid when I do calamari rings. I will try this stuffed calamari next time. Thanks for this recipe!

I suggest changing the beef with pork if you want to do it. Beef was experimental hehe. I love calamari rings but not many restaurants can make it well. A lot of them are rubbery and hard to eat. Do you have any tips to make delicious calamari rings that's not too rubbery?

I haven't experienced rubbery calamari rings. But all I know is, the longer you boil / cook the squid, the more rubbery it gets. Which is not true for rings since you will just deep fry it. I don't have idea how they do it there. 😔

I have had couple of rubbery calamari but I'll try that trick, not boiling it too long.

how divine! you don't know how much I love shrimps, i think they are brutal... i have never tried them that way, i think if you made them it's because they are really good! I hope I can make them soon, greetings and thanks for the recipe.

I have tried shrimps in many different ways. But that above is calamari or people also call them squid. What kind of shrimp recipe do you like?

I misspelled, i meant to say calamari all the way through. how i told you, i love fried breaded calamari, you should make a recipe for them :)

I wish we had enough seafoods available here but in Kharkiv, seafood is not fresh here, mostly comes from Odesa and Europe, and expensive too. I have never tasted this food, hopefully, one day I will be able to make it of my own...

Yes, Odesa is really beautiful and also famous tourist spot in Ukraine. I haven't been there yet but it's on my travel list...
