Cordon Bleu de Pollo / Chicken Cordon Bleu

Hola a todos, como se encuentran? Hoy quiero compartir con ustedes una receta que se ha vuelto un clásico en la cocina mundial, pues quien no ha probado y le fascina un cordon bleu de pollo.

Hello everyone, how are you? Today I want to share with you a recipe that has become a classic in world cuisine, for those who have not tried and are fascinated by a chicken cordon bleu.

Hay varias formas de cocinar este plato, pues hay personas que llevan el pollo ya enrollado a la nevera antes de freír y hay personas que utilizan palillos para mantener la forma del enrollado, siendo yo del segundo grupo.

There are several ways to cook this dish, as there are people who take the already rolled chicken to the fridge before frying and there are people who use chopsticks to keep the shape of the roll, I being the second group.

Ingredientes / Ingredients:

  • 4 Filetes de Pechuga de Pollo / 4 Chicken Breast Fillets
  • 4 Lonjas de Queso Mozzarella / 4 Slices of Mozzarella Cheese
  • 4 Lonjas de Jamón Ahumado / 4 Slices of Smoked Ham
  • 100 gr de Harina de Trigo / 100 gr of Wheat Flour
  • 2 Huevos / 2 Eggs
  • 100 gr de Harina de Maíz / 100 gr of Corn Flour
  • Ajo, Cebolla, Paprika y Orégano en Polvo / Garlic, Onion, Paprika and Oregano Powder
  • Sal y Pimienta, al gusto / Salt and Pepper, to taste.

Preparación / Preparation:

1- Empezamos preparando los Ingredientes / We start preparing the Ingredients.

Lo primero es dejar marinando los filetes de pollo con los especias y un poquito de pimienta, no agregues aún la sal. Hacemos esto unas dos horas antes de empezar a cocinar. También puedes agregar salsa inglesa, mostaza o lo que prefieras para marinar el pollo.

The first thing to do is marinate the chicken fillets with the spices and a little pepper, do not add the salt yet. We do this about two hours before we start cooking. You can also add Worcestershire sauce, mustard, or whatever you prefer to marinate the chicken.

Luego en platos separados, agregamos la harina de trigo, en el segundo agregamos los huevos y los batimos bien, y en el último, agregamos la harina de maíz o pan rallado, con una pizca de sal y las especias.

Then in separate plates, we add the wheat flour, in the second we add the eggs and beat them well, and in the last, we add the corn flour or breadcrumbs, with a pinch of salt and spices.

Hacemos esto unos pocos minutos antes de empezar a preparar los cordon bleus.

We do this for a few minutes before we start preparing the cordon bleus.

2- A enrollar las pechugas de pollo / To roll up the chicken breasts.

Empezamos limpiando la pechuga, quitándole la grasa y los tendones. El filete tiene que ser más o menos de este tamaño.

We start by cleaning the breast, removing the fat and tendons. The steak has to be about this size.

Agregamos sal al gusto a la pechuga y doblamos el jamón y el queso cómo en la foto, para luego envolverlo todo.

We add salt to taste to the breast and fold the ham and cheese as in the photo, and then wrap everything.

La idea de envolver es que quede algo así, pero en caso de que no puedas envolver todo, intenta con otra pechuga un poquito más grande.

The idea of wrapping is to have something like this, but in case you can't wrap everything, try another breast a little larger.

Ahora colocamos los palillos para que no se desarme el cordon bleu. Hacemos lo mismo con todos los filetes y empanizamos pasando el pollo primero por la harina de trigo, el huevo y la harina de maíz.

Now we place the toothpicks so that the cordon bleu does not come apart. We do the same with all the fillets and breaded, passing the chicken first through the wheat flour, the egg and the corn flour.

3- Terminamos cocinando el pollo / We ended up cooking the chicken.

Primero vamos a cocinar el pollo en un sartén con aceite previamente precalentado, buscando que quede todo doradito.

First we are going to cook the chicken in a pan with preheated oil, looking for everything to be golden brown.

Cuando logres un colorcito así en tus cordon bleus, sácalos del aceite y ponlos en papel absorbente.

When you get a little color like that in your cordon bleus, take them out of the oil and put them on absorbent paper.

Generalmente solo cocinando en aceite no se cocinaran adecuadamente por dentro, por lo que a mí me gusta llegar las croquetas al horno por unos 15 minutos.

Generally, only cooking in oil will not cook properly inside, so I like to cook the croquettes in the oven for about 15 minutes.

Deja reposar un poco el pollo y estará listo para comer / Let the chicken rest a little and it will be ready to eat.

Generalmente yo acompaño este plato con un puré de papas y una ensalada, o con un arroz, todo depende ahora de tu imaginación!

Generally I accompany this dish with a mashed potato and a salad, or with a rice, it all depends now on your imagination!
