¡Saludos! sean todos bienvenidos a mi blog, mi nombre es Giselle Linarez, y hoy voy a escribirles de algo que creo que nos encanta a todos: ¡PIZZAS! hace poco decidimos realizar una pizza en la casa, de masa gruesa que en lo personal son mis favoritas, y de pronto teníamos mas invitados de los que esperábamos, así que hicimos otra pizza que no requiere tiempo de levado, es rápida, delgada e igual de divina. Todos los pasos están bien detallados, así que si nunca antes has hecho pizza en casa, esta es tu oportunidad.

Greetings! Welcome to my blog, my name is Giselle Linarez and today I'm going to write about something that I think we all love: PIZZAS! Recently we decided to make a pizza at home, thick dough that personally are my favorites, and suddenly we had more guests than we expected; So we made another pizza that does not require time to lift, is fast, thin and just as divine. All the steps are well detailed, so if you've never made pizza at home before, now's your chance.

Ahora sin más preámbulos empecemos por la receta de la masa que no necesita levar, para todos los que como yo, andan sin mucho tiempo para cocinar.

Now, without further ado, let's start with the recipe for the no-lift dough, for those of you who, like me, don't have much time to cook.

Ingredientes masa:

390 gr. de harina de trigo todo uso
7 gr. de levadura seca o 14 gr. de levadura fresca
1 cdta. azúcar
140 ml. de agua tibia
1 pizca de sal
1 cda. de aceite de oliva (sino tienes usa aceite vegetal)
1 cda. aproximadamente orégano en hojas o molido opcional

Relleno:

300 gr. Queso mozzarella
300 gr. Jamón
Salsa al gusto, y lo que desees, yo use: Maíz,Cebolla,y Pimentón.

Ingredients for dough:

390 gr. of all-purpose wheat flour
7 g dry yeast or 14 g fresh yeast
1 tsp. sugar
140 ml. of warm water
1 pinch of salt
1 tablespoon of olive oil (if you don't have any, use vegetable oil)
1 tbsp. approximately oregano in leaves or ground (optional)

Filling:

300 gr. Mozzarella cheese
300 gr. Ham
Sauce of your choice, and whatever you want, I used: Corn, Onion, and Bell Pepper.

  • Tip 1 Siempre prueba la levadura, coloca en agua tibia un poquito de azúcar revuelve gentilmente y dejas reposar 5 minutos, al regresar debe tener ese olor a pan, y burbujas así sabes que funciona.
  • Tip 1: Always test the yeast, put a little bit of sugar in warm water, stir gently and let it rest for 5 minutes, when you come back it should have that smell of bread, and bubbles and this way you know it works.
  • Tip 2 ¿Cómo saber si la temperatura del agua es apropiada? Si tienes termómetro debe estar entre 23 °C y tal 26 °C, muy fría la levadura no se activara, muy caliente la levadura muere; Si no tienes termómetro, con las manos limpias, coloca un dedo en el agua revisa que no esté templada, debes poder contar hasta diez, si no lo toleras está muy caliente.
  • Tip 2 How do you know if the water temperature is appropriate? If you have a thermometer, it should be between 23 °C and 26 °C. If it is too cold, the yeast will not be activated; if it is too hot, the yeast will die. If you do not have a thermometer, with clean hands, put a finger in the water and check that it is not cold, you should be able to count to ten, if you can't tolerate it, it is too hot.

Prueba de levadura / Yeast test

Si ya tienes todo tu mise en place (frase de origen francés que implica: todo listo, todo en su lugar) es decir tiene la salsa a temperatura ambiente, así como los ingredientes al gusto ya cortados, podemos poner a pre-calentar el horno 15 minutos a 250°C o 392°F, que es el tiempo aproximado que nos llevara hacer masa.

If you already have all your mise en place (French phrase that implies: everything ready, everything in place) that is to say you have the sauce at room temperature, as well as the ingredients of your choice already cut, we can put the oven to preheat 15 minutes at 250°C or 392°F, which is the approximate time it will take us to make dough.

Una vez que hemos probado la levadura, colocamos en un bol la mitad de la harina cernida, abrimos un espacio en el centro con la ayuda de una cuchara, añadimos el aceite, y el agua tibia con la levadura, integramos los ingredientes (aquí pueden agregar el orégano) y terminas de añadir la harina, una vez estén todos los elementos integrados, y con apariencia de una masa rustica colocamos la sal.

  • Tip 3 La sal no puede integrarse antes porque mataría la levadura, en este punto ya se encuentra protegida dentro de la masa.

Coloca un poco de harina sobre un mesón limpio, de preferencia liso, solo lo suficiente para evitar que se pegue nuestra masa.

Place some flour on a clean counter, preferably smooth, just enough to prevent our dough from sticking.

Inicio de amasado / Beginning of kneading

Amasa con la técnica de tu preferencia, durante 7 minutos hasta tener una masa homogénea, elástica, suave, no es pegajosa, puedes hundir un poco el dedo, y ver como ella retorna a la normalidad.

Knead with the technique of your preference, for 7 minutes until you have a homogeneous mass, elastic, soft, not sticky, you can sink a little finger, and see it return to normal.

Prueba elasticidad de la masa / Test dough elasticity

En este punto enharinamos nuestro molde (con un elemento graso y harina) y vamos estirando nuestra masa, puedes estirar con el rodillo a mí me gusta darle la forma con mis manos, colocamos la masa en la bandeja, y agregas salsa al gusto, el queso mozzarella de preferencia rallado, para que sea más fácil de distribuirlo, (en mi caso solo tenían rebanadas), añades los ingredientes que desees, y ya con el horno caliente, solo queda hornear entre 12 y 15 minutos a 250°C o 392°F hasta que se dore el queso y los bordes.

Masa gruesa de Pizza

250 gr. de harina todo uso
10 gr. de levadura seca o 20 gr. de levadura fresca
1 1/2 cdta. de azúcar
Media cdta. de sal
125 ml. de agua tibia
2 cda. de aceite de oliva (sino tienes usa aceite vegetal)

Relleno:

300 gr. Queso Mozzarella
300 gr. Jamón
Salsa al gusto, y lo que desees, yo use: Maíz, Cebolla, y Pimentón.

Thick Pizza dough

250 gr. of all-purpose flour
10 gr. of dry yeast or 20 gr. of fresh yeast
1 1/2 tsp. of sugar
Half a tsp of salt
125 ml. of warm water
2 tablespoons of olive oil (if you don't have any, use vegetable oil)

Stuffing:

300 gr. Mozzarella cheese
300 gr. Ham
Sauce to taste, and whatever you want, I use: Corn, Onion, and Paprika.

Para hacer esta pizza necesitamos más tiempo, pero el mismo amor, empiezo haciendo la prueba de la levadura en agua tibia, la dejo aproximadamente 10 minutos con el azúcar, y la cubro con un paño mientras voy organizando lo que necesito.

To make this pizza we need more time, but with the same love, I start by testing the yeast in warm water, leave it for about 10 minutes with the sugar, and cover it with a cloth while I organize what I need.

Prueba de la levadura / Yeast Test

Una vez transcurrido este tiempo, coloco en un bol toda la harina de trigo, hago un espacio en el centro con una cuchara, y agrego el aceite, el agua con la levadura y el azúcar. Revuelvo bien con una cuchara, una vez están integrado los ingredientes añado la sal, y remuevo un poco más.

Después en un mesón limpio, colocamos poca harina para que nuestra masa no se pegue, y procedemos a amasar, no realizo ninguna técnica en específico, este proceso de amasado si es intenso, debe hacerse durante 10 a 14 minutos, debes tener una masa lisa, elástica y suave.

Then in a clean counter, we put little flour so that our dough does not stick, and proceed to knead, I do not perform any specific technique, this process of kneading is intense, should be done for 10 to 14 minutes, you should have a smooth, elastic and soft dough.

Podemos usar el mismo bol donde estaba la harina, le agregamos poquito de aceite de oliva para que no se pegue la masa, y de igual forma esparcimos un poco de aceite sobre la masa, lo suficiente para que no se reseque, cubrimos con un paño de cocina y dejamos levar mínimo 1 hora máximo 3 horas, en un ambiente seco sin corrientes de aire. Mientras tanto podemos ir cortando nuestros ingredientes, enharinando el molde, ya faltando 10 minutos para que termine el proceso de levado es prudente pre-calentar el horno a 250°C o 392°F.

We can use the same bowl where the flour was, add a little olive oil so that the dough doesn't stick, and in the same way we spread a little oil on the dough, just enough so that it doesn't dry out, cover it with a kitchen cloth and leave it to rise for at least 1 hour maximum 3 hours, in a dry environment without air currents. In the meantime we can cut our ingredients, flour the baking pan, and with 10 minutes left to finish the rising process it is advisable to preheat the oven to 250°C or 392°F.

Una vez transcurrido el tiempo la masa debe haber doblado su tamaño, la sacamos del bol, le damos la forma con ayuda de un rodillo o con las manos, (yo esta no la estire del tamaño de la bandeja, porque me gustan gruesas).

Once the time has passed the dough must have doubled its size, we take it out of the bowl, we give it the shape with the help of a roller or with our hands, (I don't stretch this one to the size of the tray, because I like them thick).

Añaden la salsa de su preferencia puede ser casera o comprada, yo siempre refuerzo el sabor de la salsa con pimienta y orégano (esto es opcional). Agregan el jamón, los vegetales, y el queso (a mí me gusta colocar algunos ingredientes arriba del queso como adorno) una vez listo solo queda hornear por 20 minutos a 250°C o 392°F.

Add the sauce of your preference can be homemade or purchased, I always reinforce the flavor of the sauce with pepper and oregano (this is optional). Add the ham, vegetables, and cheese (I like to put some ingredients on top of the cheese as a garnish). Once ready, bake for 20 minutes at 250°C or 392°F.
