Palitaw (A Filipino Delicacy)

Hi food buddies here in hive!
I will share one of the Filipino delicacies called "Palitaw", from it's Filipino root work "litaw" which have a similar meaning "to float", as it will float when it's done. This delicacy is made of glutinous rice flour, grated coconut, sesame seeds and sugar. This is soft-chewy and gluten-free snack.

Here's what we need:

•2 Cups Glutinous Rice Flour
•1 Cup Water
•1/4 Cup Sesame Seeds
•1/2 Cup Sugar
•1 Cup Freshly Grated Coconut
•Water for boiling

Let's get started.

Prepare grated coconut.

In a pan toast sesame seed until lightly brown.

Mix sesame seeds and sugar, set aside.

Put 2 glutinous rice flour in a bowl.

Add a cup of water, make sure to use the same cup you use for the glutinous rice flour.

Mix it well until you form a soft dough. It will look like this.

I used 1 Tablespoon to scoop it.

Mold it into a oval shape and 1/4 inch thick then put it in plate, do not let it stick to each other.

In a boiling water, put the rice party one by one and let it cook.

When it's cooked it will float, use a slotted spoon to remove it from the water. Let it drain the excess water in a strainer.

Roll the palitaw on the grated coconut until fully covered.

Put it in a serving plate.

Add some sugar-sesame mixture according to preference.

In case you prepare this ahead of time, don't put sugar-sesame mixture on the top because the sugar will melt if it's still warm or it will become hard when exposed to air.

I hope you can try this delicacy, it's an ideal snack for those who love foods made from glutinous rice.
