Za'atar Manakeesh, Mediterranean Flat Bread

Have you heard of Zaatar? Zaatar spice is a blend of dried herbs. It consists of dried oregano, thyme, marjoram, salt, sumac (dried and ground berries from sumac flower) and spices such as cumin and coriander. It also contains sesame seeds, an excellent source of minerals and omega 6.

Za’atar a food medicine that is full of antioxidants and healing properties that protects cells. The flavor of the mixture can be nutty, toasty and tangy. Traditionally, the mixture is spread over small flat breads and can be served during breakfast, snack or as an appetizer. There are many variations of za’atar spice and it depends which Middle east country you are in, But the sumac, which is an important ingredient of a Za'atar, gives it’s tangy flavor and nutty taste from the sesame seeds. The quality of an olive oil also affects the taste of this savory mixture.

Za’atar spice is blended to an olive oil to make a mixture and to sprinkle or spread over the flat breads.

Ingredients

For the Dough

Instant yeast, 1 ½ tsp
Sugar, 1 tsp
Lukewarm water, 1 cup
All purpose flour, 4 cups
Salt, 1 tsp
Olive oil, ⅓ cup
Milk , ½ cup

For the Mixture

Preparations

  1. Mix the yeast, sugar and the lukewarm water in a bowl. Set aside.

  2. In a large mixing bowl, combine the flour, salt, milk, olive oil and yeast mixture.

  3. Knead the dough by hand or by hand mixer until the dough forms an elastic and non sticky texture, About 8 minutes.

  4. Form the dough into a ball, Brush the surface of the bowl with olive oil to avoid the dough from sticking and getting dry. Let it rest for 1 hour.

  5. Preheat the oven to 250 degree celsius for 20 minutes.

  6. Deflate and knead the dough for a couple of minutes. Divide it into two balls. Roll the dough into a round circle.

  7. Place it in a baking tray with parchment paper and poked the dough with a fork to prevent it from rising in the oven.

  8. Combine Za’atar spice and olive oil to make a mixture, Mix well and spread over into the rolled dough.

  9. Baked it for 15 - 18 minutes. Serve immediately.

Sprinkled with fresh basil leaves for additional flavor.

I also made the other half with cheese on top. They both tasted so good But my favorite is the Za’atar. Fantastic!
