To prepare 4 servings of topocho flower stew, of about 150 grams each, the following ingredients and equipment are required:
- Preparation time: 1 hour, approximately.
200 grams of topocho flowers.
1 steak of approximately 180 gr.
1 ear of baby corn.
1 onion.
1 ripe tomato.
1 carrot.
5 cloves of garlic.
5 sweet or hot peppers, to your liking.
3 tablespoons of tomato ketchup sauce.
1 teaspoon of salt, or salt to taste.
1/2 teaspoon of ground cumin.
1/2 teaspoon ground oregano.
Colored oil for frying.
300 cc of water.
A cauldron or pot, cutting board, knife, teaspoon, etc.
EL PROCEDIMIENTO / THE PROCESS
It is important to have all our ingredients at room temperature, well washed, disinfected, clean, with all the utensils at hand, in this way we accelerate the process of preparing the recipe and have more time to enjoy life. The first thing we will do is extract the topocho flowers from the acorn, in case they have harvested it; If they bought the canned flowers, what they will have to do is drain the liquid in which they are preserved. As I harvested them directly from one of the plants that is on my backyard, I proceed to extract them from the acorn, discarding those that are most exposed, since they have been in contact with certain insects. If you look closely, I have removed the tablecloth, and the reason is that the liquid expelled by the topochos indelibly stains any fabric or surface, and I do not want it to stain the tablecloth. These flowers and the larger petals, which are a beautiful purple color, I reserve for Señor Morrocoy, who likes them very much. The flowers that I will use to make the dish do not need to be washed, because they are hermetically enclosed within the acorn, which acts as a protective capsule. I did not use the whole acorn, I kept it in the fridge to make other recipes, there are many.
We will dice the meat, tomato, onion, peppers and garlic. The carrot is peeled and grated on the fine side of the grater. We proceed to add oil in a cauldron and fry the meat with the salt and spices. Meanwhile, we scrape the corn cob to extract the kernels. Once the meat has been fried, add the diced vegetables, stir and cover to cook.

Next we add the topocho flowers, the tomato sauce and the water. We stir and cover. We wait about 5 minutes and add the baby corn, stir and cover again and cook over medium heat for about 25 minutes until everything softens. Uncover, rectify the salt, lower the heat and let it rest for about 5 minutes, and then serve.
Yummy!
I accompanied this delicious stew with white rice, topocho cooked in milk and some tomato slices.
I must say that these flowers have a slightly bitter taste, which many of us are not used to, however, I will find a way to extract this flavor to be able to prepare other recipes in the future, and I will keep you informed; so it may not be a good choice if a child is going to eat this dish. The rest is a delicious, exquisite and very nutritious recipe. Yummy!

Saludos.
