He estado un poco ausente pero volví y quiero compartirles una recetita que hice con mi nonna, no lo he dicho antes, pero tengo mis raíces italianas de parte de mi padre entonces aprovechando la tarde nos fuimos a la cocina a hacer una receta que le gusta mucho a ella, y para no perder las costumbres hicimos una rica focaccia
I've been a bit absent but I came back and I want to share with you a little recipe that I made with my nonna, I haven't said it before, but I have my Italian roots from my father so taking advantage of the afternoon we went to the kitchen to make a recipe that she likes very much, and not to lose the customs we made a delicious focaccia.

No lleva muchos ingredientes, así que no tendrán problemas en hacerla ustedes también si les apetece.
    • Una cucharada de levadura de panadería
    • Una cucharada de azúcar
    • Medio vaso de agua tibia
    • Un kilo de harina
    • Una pizca de sal
    • Aceite
It doesn't have many ingredients, so you'll have no problem making it yourself if you want to.
    • A spoonful of baker's yeast
    • A spoonful of sugar
    • Half a glass of warm water
    • A kilo of flour
    • A pinch of salt
    • Oil

Lo primero que hicimos es fermentar la levadura en el vaso de agua tibia con el azúcar.
The first thing we did was ferment the yeast in the glass of warm water with the sugar.

La dejamos reposar hasta que espume y crezca.
We let it rest until it foams and grows.

En un recipiente grande colocamos el kilo de harina.
In a big container we put the kilo of flour.

Le vertimos el aceite, unas 2 cucharadas, y la sal.
We pour the oil, about 2 tablespoons, and the salt.

También agregamos la lavadura que ya está fermentada y mezclamos todo, se le agrega un poco de agua si hace falta hasta formar una maza.
We also add the wash that is already fermented and mix everything, adding a little water if necessary to form a sledgehammer.

Al principio va estar un poco grumosa y pegajosa mientras la amasan en el reciente.
At first it's going to be a little lumpy and sticky as they knead it into the recent.

Y así la pasamos a la mesa con un poquito de harina y la seguimos amasando.
And so we passed it to the table with a little flour and kept kneading it.

Aquí hay que trabajar muy bien la masa para que suba.
Here you have to work the dough very well to get it up.

Ya que la maza esta linda y uniforme la dejamos en el mismo recipiente, bien tapado y en un lugar cálido por 90min.
Since the mace is nice and uniform we leave it in the same container, well covered and in a warm place for 90min.

Pasado en tiempo estará más grande y esponjosa, nosotras la dividimos en dos y la otra mitad la envolvimos en plástico y la refrigeramos.
Past time it will be bigger and fluffier, we split it in two and the other half we wrap it in plastic and refrigerate it.

Estiramos por última vez la masa y la dejamos reposar como 30min más en el molde engrasado.
We stretch the dough for the last time and let it rest for about 30 more minutes in the greased mould.

Cortamos unos tomates en pequeños trozos y los colocamos por encima con un poco orégano y al horno.
We cut some tomatoes into small pieces and put them on top with a little oregano and baked.

Queda dorada y suave.

Hay que tener una mano muy especial para hacer la focaccia como se debe @squeo. Además felicitaciones a ti y a tu nonna porque has escrito la palabra focaccia como se escribe en italiano (se ve que las raices no se pierden.)

La focaccia es ligure por antonomasia (de Liguria) y la más famosa es la de Recco, una pequeña ciudad que está a no más de 40 kms de Génova. A tal punto que lleva su nombre: Focaccia di Recco.

Es bastante fina, como la pizza italiana de Nápoles.

Lindo reencontrar estas recetas.

Si tu abuela no ha perdido el uso del italiano le recomiendo mis dos blogs dedicados a las Recetas de Cocina. Uno se llama Il Mondo del Dolci y está dedicado por supuesto a los Dulces y Postres. El otro se llama La Cucina de Susana (mejor dicho es de mi madre) y lleva publicadas más de 5.000 Recetas de Cocina en general. Te aclaro que vivimos más de 20 años en Italia.
