Hey you, always hungry people of Foodie community! Are you in the mood for something light, healthy and fulfilling?
I have for you, a bit changed, old recipe that I learned from my mother. It's called musaka here and it's usually made with potatoes, but I prefer it with zucchini. It easy to make, as always, since I'm not much of a cook.
Let's go!
Ingredients:
- 2 large zucchinis
- 1 carrot
- 1 yellow onion
- 1 egg
- Heavy cream
- Minced meat
- Flour
- Salt and pepper
Preparation
As always I prepared everything I needed for the dish, but this time it was important to prepare the zucchini before hands, because it has a high water content, and needs to be drained before cooking.
Then I sautéed the onion and carrot, to soften them up before I added the minced meat to brow it a little. It doesn't have to be fully cooked, because it will continue the process of cooking later.
It's very juicy and flavorful dish, and the smell that is spreading around the house reminds me of childhood, when I would run around the kitchen while my mother cooked (mostly because I wanted to participate in everything, but with no result, obviously, because to this day I can't really cook).
Since the zucchini is still full of water, I rolled it in a bit of flour to absorb the excess moisture while cooking.
Moussaka is a dish made usually by putting rows of potatoes and minced meat, until you run out of meat. But I, as I said, love zucchini and decided to make it with this veggie instead.
The next row is the meat, then again zucchini and the top layer should be beaten eggs with some heavy cream.
I left it on low heat for half an hour at least, to nicely cook the veggies and meat and to give the flavors the chance to properly develop (and to read a book, to be honest).
I added some corn on a cob and radishes for extra veggies intake and color, and because my little one loves them too!
Ta-Da! Ready to be devoured!
