Homemade Stew - Veggies & Pork with Rice

Hello you hungry foodies! Let's make one more dish together!

It's called đuveč in my country, Serbia, and I'm pretty sure our neighbors call it that too. I think it's originally a Turkish dish, made of rice, vegetables and meat. There are many variations depending on your taste, but here is mine, adjusted to my toddlers needs! (and wishes)

Ingredients:

  • Meat of your choice (I had pork)
  • 2 Carrots
  • 1 yellow onion
  • 3 garlic cloves
  • Mixed vegetables (corn, peas, tomato, pepper..)
  • 1 cup of rice
  • Salt and pepper
  • Olive oil

Preparation:

I usually prepare everything before preparation, I chopped the meat, veggies and equipped my little one with some coloring books, to keep him enetertained.

First thing I did is to preheat a bit of olive oil, and softened up the garlic, onion and carrots. I find that this is the easiest way to get the flavors but don't get or be left with the texture of the onion, that I don't really like.

It takes about 20 minutes on low heat, I add water if it's needed, because it can and will burn, and leave a bitter taste (I know).

When the onion becomes translucent and carrots a bit softer, I added the meat and let that simmer for a bit before adding the rest of the veggies. Here you can buy frozen veggies made especially for this dish. It's easier and very convenient, but still fresh and healthy.

The colors look amazing and the smell is now spreading around the house. Yum!

After the meat is a bit softer, or after another 20 minutes on low heat and with adding water as needed, I added rice and potatoes with a big glass of water. The rice should cook on low heat for at least 30 minutes (add water when it evaporates) and stir occasionally so it doesn't burn.

When it thickens a bit, you can add a bit of salt and pepper or other spices if you like. There is no need to add flour because there is starch in potatoes and in rice, so it will thicken up just fine.

Serve it in a fancy bawl you inherited from your grandma and enjoy you quick and healthy, colorful dish!
