"Bhetki Paturi (Masala Steamed Barramundi)" , A traditional Bengali fish recipe ; entirely cooked in banana leaf

I'm Tanuja Sarkar.

Today I want to share a traditional and very tasty Bengali fish recipe. Actually this is a steamed fish recipe, but there are some slight changes. In this recipe the whole fish is steamed in banana leaf with mustard sauce, coconut powder and other masala. In this recipe I cooked "Bhetki" fish, commonly known as "Barramundi" in English. And as I steamed the fish in banana leaf so, it's called "Paturi"; In Bengali "Paturi" means "Leaf".

Bhetki fish

Ingredients: (for 5 people)

  1. Bhetki fillet - 10 pieces
  2. Grated Coconut - 100 gm
  3. Grated Poppy Seeds - 50 gm
  4. Grated Mustard Seeds - 50 gm
  5. Yogurt - 50 gm
  6. Mustard Oil - 100 ml
  7. Cumin Powder - 1 tbsp
  8. Turmeric Powder - 1 tbsp
  9. Salt - to taste
  10. Green Chilies - 10 pcs
  11. Red Chili Powder - 1 tbsp
  12. Banana leaf - 10 pcs & thread - as needed (to tie up leaf)
  13. Lemon juice - 2 tbsp

=> Bhetki fillet - 10 pieces

=> Grated Coconut - 100 gm

=> Yogurt - 50 gm

Cooking Procedure:

<=> Mix properly Grated Coconut, Grated Poppy Seeds & Grated Mustard Seeds. Pour mustard oil in the mixture & stir very well.

<=> Add yogurt to the mixture & add also cumin powder, red chili powder, turmeric powder & salt. Mix them well & keep aside.

<=> Add salt, lemon juice and turmeric powder to fillet & marinate them in fridge for at least 30 minutes.

<=> Bake slightly all banana leaves. It protects the fish to be burnt.

<=> Take a banana leaf, pour 1 tbsp masala mixture to the centre of the leaf. Put a fillet into the mixture & coat the fillet very well with the mixture.

<=> Wrap the masala coated fillet with banana leaf very well. And tie it in thread.

Wrapped fillet

<=> Pour a small portion of mustard oil (approximately 1-2 tbsp) in the frying pan. add 3 pieces of wrapped fillet to the pan. Adjust the flame at medium stage. Cover the lid. And fry the both sides of the wrapped fillet for approximately 7-8 minutes each.

<=> When both sides of the wrapped fillet turns to blackish/ brownish then your cooking is almost finished. Put down all the wrapped fillet.

<=> Cut the threads & unwrap it. Your favourite delicious "Bhetki Paturi" is ready to taste.
