Gluten-Free Oatmeal Peanut Butter and Cranberry Cookies

Today, my client requested my Gluten-free Oatmeal, Peanut Butter, and Cranberry cookies, (she loves them!) so I thought I would share this version of these cookies.

Preheat your oven to 350 degrees
Bake 10-15 minutes
Makes 12-15 Cookies

Ingredients:
1 cup of Peanut butter
2 Eggs
1 tsp of vanilla
1/2 cup of granulated sugar or the sugar replacement of your choice
1/2 cup of brown sugar or brown sugar replacement of your choice (Client was out of replacement so I used regular this time)
3 cups of oatmeal (old fashion oats hold moisture for softer cookies)
1 cup of Dried Cranberries

Preheat your oven:

Place all the ingredients into a bowl for mixing.

I use gloves to mix by hand and because these cookies do not rise or spread, I shape them to the exact size and shape that I want them to turn out after baking.

Nice round cookies!

Bake for 10-15 minutes until the bottom of the cookie begins turning a golden brown.

They smell INCREDIBLE!!!
