My mother’s delicious cake recipe – memories of my childhood

This is a mommy-cake bringing me back to times where my mother used to give it to me as a school snack … or I would take a quick bite whenever I wanted to eat something quickly and with nice homey flavor. As I discovered it is very easy to make!

Ingredients: 5 bio eggs, 2 cups of sugar not filled completely, 1 cup of corn oil (or whichever oil of the same category), 1 bowl of yogurt 240gr (I chose goat’s traditional yogurt); alternatively a cup of milk, 2,5 cups of all purpose flour, 20gr baking powder, 50gr of granulated dark chocolate, 1 lemon zest, 1 shot of amaretto liqueur or whichever liqueur you prefer

I use my stand mixer – in slow motion - which is a very big help in my kitchen. If you don’t have one, you can use a hand mixer instead. So, initially I mix eggs and sugar until sugar dissolves. Then while mixing I gradually add yogurt, corn oil, lemon zest and liqueur.

In a separate bowl I mix the flour, the baking powder, and the granulated dark chocolate. The reason for adding the chocolate with the flour is that it has more chance of not standing at the bottom of the cake tray later. Add the flour gradually to the eggs’ mixture while the mixer is working slowly.

You can use whichever cake tray you prefer. Just use greased proof paper or apply some oil inside your baking tray. Pour the mixture in the tray. Bake in pre-heated oven in 160-170C for 45’. Make sure your cake is ready after steeping a knife in the cake and coming out without residuals.
