Hola hivers!! Todo bien, gracias a Dios.

Hoy quiero presentarles mis primeras conservas de coco 😍😋


Este dulce es típico de mi Venezuela, se elabora de forma artesanal desde siglos. A mi, particularmente, me hace recordar a mi mamá, que era una especialista en dulces, en conservas, con almíbar, y hacía de sabores que uno diría: "¿pero con eso se hace dulce?"... Siii, y es que ella hacia dulce en almíbar de limón, de naranja, toronja, tomate, y le quedaban espectaculares 😋 mmmm yummi, yummi 🤤 para repetir y más. 😂😂


Lo único es que yo nunca aprendí porque no me interesó en ese momento y ahora que me gustaría hacer uno de esos y recordarla y honrarla en mi corazón, no lo sé hacer 🥺


Pero cuando uno quiere hacer algo, pues va y busca la información. Y me interesaba saber cómo hacer unas conservas de coco, ya que tenía 1 coco en casa y queria aprovecharlo. Así que me puse manos a la obra...

INGREDIENTES


Aquí les comparto los ingredientes:

PROCEDIMIENTO


Lo primero es sacar el coco de su concha, lo cual es un procedimiento sencillo. Yo lo rompo golpeándolo con un martillo, tratando de que no se le bote el agua, ya que esta agua es muy beneficiosa para la salud.
Ya después de abierto, saco la pulpa con la ayuda de un cuchillo cuidando de no cortarte... Ojo ...


Ahora agarras la pulpa y la rallas, aunque se consigue en el mercado el coco ya rallado yo prefiero tomarme ese trabajo.

De igual manera se procede con la panela, la troceas con el cuchillo y la colocas en la taza de agua para que se vaya diluyendo.


Ya con estos dos procesos adelantados, se unen en una olla, se agrega la taza de azúcar y la ralladura de limón y se pone al fuego, dándole vueltas con una cuchara regularmente para evitar que se vaya a pegar del fondo de la olla y se queme, lo cual le daría un sabor amargo.


Mientras se cocina, dispon en una bandeja las hojas de limón bien limpiecitas. Claro, puedes prescindir de las hojas y colocarlas sobre la bandeja directamente, pero es un detalle que se usa para decoración.

Y pendiente de la olla, moviendo la mezcla, dándole vueltas, dejando que se seque todo el líquido. Esto permite que queden más duritas las conservas. En las fotos verás que las mías no las dejé secar por completo, ellas me quedaron algo cremosas, el caramelo no se endureció por completo.
Ya cuando está lista la cocción, se deja reposar unos minutos para que le baje un poco la temperatura y así no te quemas.

Luego comenzar a servir por cucharadas sobre las hojas de limón. Y ya solo queda esperar que enfríe bien. Puedes dejarla al natural, cubrirlas con una bolsa plástica y guardar en la nevera.

This sweet is typical of my Venezuela, it is made in an artisanal way for centuries. To me, particularly, it reminds me of my mom, who was a specialist in sweets, in preserves, with syrup, and made flavors that one would say: "but with that is sweet? Yes, and she made candy in lemon syrup, orange, grapefruit, tomato, and they were spectacular 😋 mmmm yummi, yummi 🤤 to repeat and more. 😂😂


The only thing is that I never learned because I wasn't interested at the time and now that I would like to make one of those and remember her and honor her in my heart, I don't know how to do it 🥺.


But when you want to do something, you go and look for the information. And I was interested in knowing how to make some coconut preserves, since I had 1 coconut at home and I wanted to take advantage of it. So I got down to work....

INGREDIENTS

PROCEDURE


The first thing to do is to take the coconut out of its shell, which is a simple procedure. I break it by hitting it with a hammer, trying not to spill the water, since this water is very beneficial for health.
Once opened, I take out the pulp with the help of a knife, taking care not to cut yourself ... Eye ...


Now you take the pulp and grate it, although you can get the coconut already grated in the market, I prefer to take the trouble.

In the same way you proceed with the panela, chop it with the knife and place it in the cup of water to dilute it.


And with these two processes already advanced, put them together in a pot, add the cup of sugar and the lemon zest and put it on the fire, turning it with a spoon regularly to prevent it from sticking to the bottom of the pot and burning, which would give it a bitter taste.


While it is cooking, arrange the lemon leaves in a tray, well cleaned. Of course, you can dispense with the leaves and place them directly on the tray, but it is a detail that is used for decoration.


And hanging from the pot, stirring the mixture, turning it around, letting all the liquid dry. This allows the preserves to be harder. In the photos you will see that I did not let mine dry completely, they were a little creamy, the caramel did not harden completely.
When the baking is ready, let it rest for a few minutes to lower the temperature a little bit so you don't burn yourself.

Then start serving by spoonfuls over the lemon leaves. And now all that's left is to wait for it to cool well. You can leave it plain, cover it with a plastic bag and store in the refrigerator.
