The ecoTrain ecoTrain Simple Vegan Cooking on a Budget Month is in full swing and I'm happy to share with you this amazing curation of posts submitted. The ecoTrain community has never been so busy with amazing recipes it truly is inspiring!

At the end of this month I am going to compile a PDF recipe book for us all to download and share and inspire. What makes these recipes all the more valuable is their simplicity and of course low cost to make. Vegan cooking doesn't have to be difficult, and certainly don’t have to use specialised or expensive ingredients. In fact some of the best recipes are the most simple, as you will see as you scroll through this curation.

Thank you to everyone who has taken part so far. Its clear you have all put a lot of love and time into these posts, which makes me very happy that most recipes have received beautiful up-votes from the ecoTrain as well as the OCD Community Initiative. A hearty congratulations to all of you who have received this support, i know it inspires many of us to keep posting and sharing! If you didn’t know the OCD support is new initiative that is working very well so far, and im happy to see SO many of you get big up-votes for your posts. That was always our desire, and now @acidyo and the OCD Community Initiative has made it possible to reward so many of you with anything between $10 and $35 for a post. This is what Hive is all about folks!

Carrot Dogs - marinated and charred carrots rolled into pitas with salad

This week for meat-free Monday recipe and easy vegan cooking on a budget is carrot hotdogs. Aka marinated and barbecued carrots wrapped in a homemade pita.

Note: this isn’t a recipe that will easily cross to the UK where barbecuing is attempted once a year, when the weather gods align and someone has the time and inclination to burn the coals until they become barbecue-able embers. In Australia we just use bottled gas.

First cut any large carrots and boil for about five minutes, or when they reach the tender but not quite cooked stage.

To continue supporting the initiative of the month of August Vegan, where @ecotrain and @ocd, encourage healthy eating ... today I want to start the week sweetly, with a delicious "pumpkin and spices cake".

I am going to make this tasty recipe to take advantage of a beautiful pumpkin that was given in my garden, I really always harvest them because they are very versatile to cook, with it you can make an endless number of savory and sweet dishes, today I will make this delicious dessert, which consists of in a cake with the pulp of the pumpkin, with rich spices (cinnamon 'nutmeg, ginger ) which add a very special touch to this preparation.

WABI-SABI VEGAN BREAKFAST RICE TOPPINGS | ecoTrain Simple Vegan Cooking On A Budget Month!

LIFE IS CHANGE


I began the morning thinking of a simple three ingredient meal and black coffee for breakfast, but something was nudging me to add a few more ingredients to spice up my dish and create a wonderful breakfast meal.

Wabi-sabi is the Japanese term used to describe beauty through impermanence. It seeks to find beauty in the simplicity and rustic elements that follow natures' way, and the path to enlightenment, which began with zen monks and samurais in the 13th century. Centered on the philosophy of seeing the beauty in imperfections, I see it as connected to minimalism and the yin-yang opposite of the western concept of modern beauty - a perfect complement.

Cooking for me involves wabi-sabi and in a way is very intuitive. Even if I have a tried and tested recipe, I'm open to changes and additions that may change the texture and character of a dish.

MARKET DAY
As my fresh fruits and vegetable vendor did not bring me my supply of bananas for breakfast, and looking at the pantry, I realized that I needed to use up what's left and re-stock on our supplies and groceries. For breakfast, I started off with just three ingredients in mind: button mushrooms, black beans and pineapple tidbits.

I cooked ginataang ubod ng niyog for the lunch dish of my family.

The main ingredients for the dish I cooked are the ubod ng niyog and the coconut milk.

The first thing to do is clean the ubod ng niyog. Chop to the desired cuts.

I have been in the kitchen for a good portion of the afternoon, as per my usual meal prepping Sunday routine. After missing last week's market, I loaded up on plenty of goodies yesterday to make up for it. There are still plenty of glorious late summer fruits and veggies hanging on for a bit longer, and the start of the autumn bounty, as well. We are quite lucky here in my part of the world that the growing season is quite long so it is rare to not be able to fill our plates with mostly locally grown, fresh produce.

Broccoli and cauliflower are by far my favorite vegetables, they are really delicious in raw or cooked salads, stewed, sautéed, fried, overflowing, au gratin, in short, as you can imagine they are really delicious, besides being very economical and productive when preparing them. When it comes to "Thekua", I know only few Indian were aware of it. It is one of the well known snack item recipe of Eastern India, especially Bihar/Jharkhand and parts of Uttar Pradesh

What is Thekua ?

It's better I would give a more detailed explanation as available over the internet (Wikipidia).

Thekua or also spelt Thokwa or Thekariis is a dry sweet from the Indian subcontinent. It is very popular in Bihar, Jharkhand, West Bengal, eastern Uttar Pradesh and Terai region of Nepal. Thekua is a revered Prasada, offering to god in the Chhath puja. It has been used as a sweet snack for centuries in these places. - Wikipidia.

Hello friends!!

In support of the @ecotrain initiative in conjunction with @ocd, today I want to share with you a delicious recipe that I use to prepare regularly, because it is easy, simple and tasty. I tell you about some mini corn pie with chives. I love corn, in fact in my yard I have some plants that are easy to grow and we have to take advantage of their contributions since it is rich in vitamins and minerals howas iron, phosphorus, magnesium among others.

Recipe: Vegan Carrot Soup With Ginger and Lemongrass

This carrot lemongrass soup seriously delivers. On top of the carrots it’s got ginger, lemongrass, garlic, red curry paste, coconut milk, coriander, and lemon zest. The flavour combinations are so completely matched that there isn’t a hint of the “rootiness” of the carrot. It’s a good transition soup–the carrots make it about it Fall, but the levity in its flavour keeps its roots (no pun intended) in the Summer.

ecoTrain Simple Vegan Cooking On A Budget Month: Khaman Dhokla

The specialty of Indian food is that most of the food here is basically vegan but since the consumption of milk and milk products increases after the white revolution, vegan food has also become non vegan due to the adulteration of dairy products.

There are some examples like Jalebi, which is a vegan dessert but since it is started to fry in animal fat like ghee and curd is added in batter it has become non-vegan. Similarly Khaman Dhokla is also a vegan food but curd is started to add in its batter so it also become non vegan.

Both these recipe are excellent and delicious when prepared without using any dairy product.

Today in ecoTrain Challenge I want to share a very simple but delicious traditional food of Gujarat state of India, it is known as Khaman Dhokla
Here Khaman means fermentation and Dhokla is a preparation made of different lentils.
Basically it is a recipe made by a fermented batter but now a days prepared instantly using baking powder and baking soda.
It can be prepared with rice flour or gram flour. Dhokla made with rice flour is white in colour while gram flour dhokla is yellow in colour. Both have their own distinct flavour.

I have an Ital recipe for Mushroom-Coconut Soup. When we lived in Cambodia we ate this a lot, but first time in Suriname. It is one of my family's favorite foods.

I never to saw mushrooms in the market near my house. I had to buy them in China store so far from my house. I don’t know these mushrooms from where.

Hope you all enjoyed with my recipe, it's not too expensive to make, you can get all ingredients in the Caribbean too, and because Ital for Rasta is okay for vegan too.

When we think of cookies, we might be lazy to make it yourself at home. Likewise with me who thinks so. But that doesn't happen to me anymore when I only had a low budget.

Now I am used to saving on food expenses. Making your own meals at home is both happiness and saves money.

So I always learn to make meals on a low budget that I adjust to my home supplies. I often modify the recipes that I get on the internet to be lower budget but the results are still delicious. Even I did not expect the results to be delicious beyond my expectations.

Hi, @ecotrain, please allow me to share my low-cost viand for today. It's full of health builders that will boost our body's immune system. Yes, it's low-cost but too dear for me.

I have a lot of issues with my health. I never thought I could live longer. But the place where I am recently working helped me and it's a blessing in disguise.

Aside from living in a rural mountainous place, I'm so very careful.in my food intake to maintain the instructions of the doctor.

Sweet potato with its sweet taste is one of my favorite tubers, and it is so versatile that we can use it in salty food as well as sweet dishes, my son loves sweet potato cake and pancakes, so it is very likely that sweet potato will never be missing from my pantry.
