Interesting, I've heard of different strains of oyster mushroom mycelium, but I haven't heard the name "lion's mane" yet. I'll have to Google it. :)
What form of mushroom do you prefer? Fried, pickled, salted, boiled, or boiled after drying?

I like mine sautéed in butter and black pepper, maybe a touch of fresh lemon juice for brightness.
The creamy salo brings out the flavor of the mushrooms, it sounds very appetizing :)
But I would add a lot of fried onions and simmer it all in sour cream.
