Greetings to the Hive community, taking advantage of the expected mango season I want to share with you a delicious mango ice cream recipe that I learned on Sumito Estevez's channel, excellent Venezuelan chef.
Para el helado necesitamos los siguientes ingredientes :
- Pulpa de mango (1kilo aproximadamente)
- 1 lata de Crema de leche (batida)
- 3 Claras de huevo
- 1 taza de azúcar
For the ice cream we need the following ingredients:
- Mango pulp (approximately 1 kilo)
- 1 can of milk cream (whipped)
- 3 egg whites
- 1 cup of sugar
Mango ice cream
Primero licuamos la pulpa de mango.
First we blend the mango pulp.
Luego ponemos en baño de María, las claras de huevo y el azúcar se revuelven y se cocinan sin pasarse de los 100º, el punto es cuando el azúcar ya esté completamente derretida y la clara se transparente.
Then we put the egg whites and sugar in a bain-marie, stir and cook without exceeding 100º, the point is when the sugar is completely melted and the egg white is transparent.
Esta mezcla la llevamos a punto de nieve y almacenamos mientras preparamos el resto.
This mixture is brought to stiff peaks and stored while the rest is being prepared.
La crema de leche debemos levantarla y esta es una de las partes más difíciles. Se bate hasta que se hace la chantilly.
The cream must be whipped and this is one of the most difficult parts. It is whipped until the whipped cream is made.
Ahora se mezcla el merengue, la crema chantilly y la pulpa con movimiento envolvente.
Now mix the meringue, whipped cream and pulp in an encircling motion.
Y se lleva la mezcla al congelador. En unas horas ya tienes un delicioso y refrescante helado.
And take the mixture to the freezer. In a few hours you have a delicious and refreshing ice cream.
