Mujadara Recipe- The quick and tasty Moroccan Delicacy ! You have to taste it ! YUM!

Ever since my husband went to Egypt a few years ago he has been raving about this one dish he had while visiting a Moroccan family. He had in fact forgotten the name and the correct pronunciation. However recently while browsing the net he suddenly ran upto me in the kitchen and showed me the dish. While at first i was a bit annoyed at being disturbed in the middle of my Work + Cooking routine , the look on his face just melted my heart.

So today i decided to make it for him. I did not get it rite the first time. I tried following recipes but as a person who has cooked from the heart recipes never did work for me. Then I reached out a colleague of mine who is from Egypt. She helped me out!So after a bit of adjustments and following my heart here is an Atmanirbhar version of the dish:P

This is a very quick and easy recipe to make. In fact its one of the easiest comfort food recipes i have seen. In fact the dish has become popular in my family too. Now my Mom and sister also want the recipe.

Tip

Once cooked be gentle with the dish. In India we have way to transferring rice from one bowl to another without touching it. If you are into familiar use a gentle approach with a spatula. If you are too hard you will end up smashing the dish and make it mushy.

Ingredients

3/4th cup brown lentils
1 cup brown rice
1 1/2 tsp ghee/olive oil
1 medium size onion chopped
4 cloves garlic grated.
2 tsp cumin
1 tsp cilantro
1 tsp garam masala or All Spice
½ tsp cinnamon Powder
½ tsp turmeric powder
¼ tsp grated ginger
1/2 tsp red chilli powder (optional)
1 ½ tsp salt / Or to taste
1 teaspoon dried mint powder
1 lemon Cut for Garnish.
Lemon skin scrapped.
3.5 cups water

The Recipe

Place lentils in a bowl and the rice in separate bowls and pour hot water and cover them.
Heat a pressure cooker with a tbsp of ghee/oil.
Once the oil heats add the Cumin seeds and fry.
Now add the garlic and ginger. Fry for a few secs.
Add the Onions and fry till they start caramelizing.
Add the Garam Masala, Turmeric Powder, Cinnamon, Red Chilli and Dry Mint and Lemon Skin and salt. Fry them till they Mix.
Now Add the Lentils and the Rice into the pressure cooker.
Water to be poured over the mixture.Mix well.Close the pressure cooker and Cook.
Keep flame high till the first whistle. Reduce flame to low post that. Cook till 7 whistles or till they are done.
Heat a pan with a tbsp of oil.
Add veggies of your choice. I added beans, carrots and onions. You can add much more to this. If your diet is non-vegetarian you can even add minced meat / Keema to it as well.
Sautee the veggies.
Serve the Rice with Sauteed Veggies Or Yogurt, Papad or Dip of choice.
