Semolina | Sooji Handvo recipe

Breakfast is an important meal of the day. It’s a meal after a long gap for the body. Also, it’s probably the meal we have before we go about our daily business. Its also important the first meal of the day gives us a pleasant feeling. It sets the tone for the day. Hence taste is also important when it comes to breakfast.

Sooji Handvo is a quick and yet nutritious and tasty meal. Its healthy enough for adults to enjoy and tasty enough for kids to love it. During times like these with the lockdown, when it’s difficult to go out and get proper exercise its important we compensate with our diet.

Sooji is called Semolina in English. Semolina is the course, purified wheat middlings of durum wheat mainly used in making upma, pasta, and couscous. This dish comes from the western part of India, from the province of Gujrat.

An instant Gujarati Breakfast dish or can also be prepared as an instant snack.

Serves: 4 people Preparation Time: 15 mins Cooking Time: 20 mins

Ingredients:

3/4 cup Sooji (Semolina)
1/2 cup Besan (Black Gram Flour)
1/2 cup Rice Flour
3/4 cup Whipped Curd
2 tbsp Roasted Peanuts grounded
1/2 tsp Turmeric (Haldi)
1/2 tsp Chilli powder
1/ 2 tsp Cumin Seeds (Jeera)
Salt to taste
1 tsp Mustard (Rai)
1 tsp Sesame seeds (til) - Optional
3/4 Tsp Eno fruit Salt / Baking soda
3 tbsp Oil

Veggies: You can use other vegetables as per availability like onion, capsicum, bell pepper etc

1/2 cup Cauliflower grated
1/2 cup Carrot grated
1/2 cup finely chopped Red/ Green Cabbage
1/4 cup Fresh Peas
F1 /4 cup finely chopped French Beans
10 to 12 leaves Curry leaves - Optional
1/2 tbsp Ginger paste
1 to 2 finely chopped Green Chillies
Finely chopped Coriander leaves
1 cup Water

The Recipe

Mix Samolina, Gram flour, Rice flour in a big bowl.

Add spices such as salt, chilli powder, Turmeric powder, coriander leaves, ginger paste, chopped green chillies and curry leaves. Mix well.

Add whipped curd and water in small quantity to make a thick paste.

Add all cut and chopped vegetables and crushed peanuts and mix well in to a thick paste.

Add more water, if required. Keep aside for about 10 minutes.

Heat a frying pan. Put oil in pan when the pan heats up. Wait for the oil to heat up.

Add mustard seeds till they crackle.

Add cumin seeds.

Add sesame seed and sauté it.

Now take out 1/4th of this batter out into a separate bowl. (This is important)

Mix 1 tsp of Eno fruit salt/Baking Soda in one portion of the batter.
Put the batter in the pan.

Spread it evenly.

Cover with a lid and cook for 6 to 7 mins on slow flame.

Put some of the oil and condiments mix on top.

This is important, turn the Handvo upside down without damage. Its best if you can do in the pan itself. If not you may need to slide it out onto a plate and then flip and slide back into the pan.

And cook the top potion also for a while.

Once its golden brown and crispy on both sides flip it on a plate.

Cook the remaining batter to cook in a similar manner.

Its important to note that the baking soda/Eno Salt should be only added just before one cooks. In case one wants to store the batter in the refrigerator, do not add the baking soda.

Cut in to small pieces and serve with chutni or sauce/ dips and enjoy a crispy Handvo. Children may enjoy it with honey.

PS: You can also cook the Handvo in an oven by heating the oven at 200 degree centigrade and cook for 10 minutes.
