Crunchy textures for side dishes and is a vegan option? Maybe crunchy textures are more of snack food. But let's think outside the box.
The crunchy textures that I discuss here are related to vegetables and are complementary to vegan lunch dishes.
When discussing a more specific thing, then I would say this menu is more familiar to Asian people. But it is possible that you can make my recipe as an inspiration.
You can change the type of vegetables according to the appropriate stock where you live.
So this time I will share the recipe for "Stir-fried Baby Corn with Green Veggies and Fried Tempeh".
The green veggies that I mentioned are my way of telling you that you can replace the vegetables you use with the ones that suit you better.
Everything we need
- Baby corns, 300 grams
- Soy sauce, 3 tablespoons
- Seasonings (Garlic, onion, peppers, salt)
- A little water to taste
- Green Veggies, in this recipe I use Pakcoy
How to cook
- Wash the vegetables and baby corn. Then cut it into pieces.
- Heat the oil. Add the spices and saute until fragrant. Then add the soy sauce.
- Enter the vegetables and baby corn. Add a little water. Then cook them for about 5 minutes.
- The thing to note is to keep the vegetable texture crunchy.
- Correct the taste, then remove and serve warm with rice or mashed potatoes.
Additional
In this recipe I use an additional dish, namely fried tempeh.
The texture of this fried tempeh is still crunchy while it's warm.
So you better serve fried tempeh as soon as possible to keep the taste and texture delicious!
Those were the ideas for vegan dishes for lunch. Maybe this could be an idea for your weekend treat, with a soy sauce that's worth a try.
