Hello friends, today I asked my friend Paola to show me her recipe for rice with chicken and saffron that I love and I have never been able to replicate at home! This time she has given me the opportunity to do it while she assisted me, it has been delicious just like her! so I'm going to share the step by step so that you can do it too.
Hola amigos, hoy he pedido a mi amiga Paola que me enseñe su receta de arroz con pollo y azafran que amo y nunca he podido replicar en casa! ésta vez me ha dado la oportunidad que yo lo haga mientras ella me asistia, me ha quedado delicioso igual que a ella! asi que voy a compartirles el paso a paso para que puedan realizarlo ustedes tambien.
To make this recipe for approximately 5 adults we will use 1 whole chicken, 1 package of rice, 2 cubes of dehydrated chicken broth, 3 large onions, a large bell pepper, garlic and parsley to taste and finally a lot of saffron
Para realizar ésta receta para aproximadamente 5 adultos utilizaremos 1 pollo entero, 1 paquete de arroz, 2 cubos de caldo de pollo deshidratado, 3 cebollas grandes, un morron grande, ajo y perejil a gusto y finalmente mucho azafran
We will start by cooking the desired amount of rice in double the liquid for approximately 15-20 minutes.
Comenzaremos cocinando la cantidad de arroz deseada en el doble de liquido por aproximadamente 15-20 minutos.
In a pan or disk we are going to heat oil and we are going to place all our previously chopped vegetables. It is not necessary to follow a cooking order since these will only be part of a cooking background.
En una sarten o disco vamos a calentar aceite y vamos a colocar todas nuestras verduras previamente picadas. No es necesario seguir un orden de coccion ya que éstas solo van a formar parte de un fondo de coccion.
When the vegetables are cooked we are going to add our chicken with a little broth.
Cuando las verduras ya estén cocidas vamos a agregar nuestro pollo con un poco de caldo.
We will add broth as it evaporates and we will season. I used paprika, cumin, oregano, ground chili and white pepper.
Iremos agregando caldo a medida que éste se vaya evaporando y vamos a condimentar. Yo utilicé pimenton, comino, oregano, ají molido y pimienta blanca.
We are reaching the end of cooking, we are going to add our previously cooked rice along with all the saffron.
Ya estamos llegando al final de la coccion, vamos a agregar nuestro arroz previamente cocido junto con todo el azafran.
And this is the final result! a rice with chicken with a delicious and spicy saffron broth. Its flavor is really delicious, we were 5 adults and we all repeat dish! LOL
Y éste es el resultado final! un arroz con pollo con un delicioso y especiado caldo de azafran. Su sabor es realmente delicioso, eramos 5 adultos y todos repetimos plato! jaja

This is my first time I look at the rice with chicken, and it looked a delicious dishes.
It looks soo yummy. In Bangladesh, we have something like this. We called chicken Khicuri and where I am currently living (Serbia), they call it Pilav. Though they don't use safran.
