There is nothing more refreshing than fruit on a hot day. That is why I like to add fruit to my salads in the summer. The following are a few recipes that I have enjoyed these past few months. They combine only a few simple ingredients and are quick and easy to make. You can plate them elegantly like I did for the pictures or simply mix all the ingredients in a bowl, either works just as well. I hope you enjoy!
Watermelon Feta
Ingredients
Sweet watermelon juxtaposed against the savory feta, this super simple salad only has four ingredients.
Watermelon
Feta cheese
Balsamic reduction
and a herb of your choice (mint, basil or arugula work well)
Cantaloupe, Tomato, Cucumber
Ingredients
Who would have thought that cantaloupe would be good in a salad? Turns out it works really well with tomato and cucumber.
Cantaloupe

Cucumber
Bocconcini cheese (aka Mozzarella) or feta cheese
Shallots finely chopped (optional)
Balsamic reduction
Olive oil
Arugula or basil
Course sea salt
Avocado Grapefruit
Ingredients
The soft texture of the avocado, the acidity of the grapefruit, the sharpness of the shallots, all of these work together to make this an awesome salad.

Shallots
Balsamic reduction or Balsamic vinegar
Olive oil
Course sea salt
Optional dressing
Lemon or lime
Sugar
This one is slightly more complicated. The most challenging part is preparing the grapefruit. This is done by first cutting the skin away from the fruit leaving the flesh exposed (without the inner membrane). Next, use a sharp knife to sector each slice of grapefruit at its natural segment, removing the skin on both sides.
Prepare a dressing using olive oil, the remaining juice from the grapefruit husk, a splash of lemon or lime, a little sugar (to taste) and finely chopped shallots. Garnish with balsamic and course salt.
Caprese Salad
Ingredients
A traditional salad that works with everything.
Tomato's
Bocconcini (aka mozzarella)
Basil (or arugula)
Oilve oil
Balsamic reduction or Balsamic vinegar
Course sea salt and pepper to taste
Quite the chef, eh? Looks delicious! Perfect to fill the cavity in that hollow tooth of mine. Now, how about some beef salad with potato dressing?

Good beef recipe, serves 40:
(1) Get cow.
(2) Kill cow.
(3) Cut in small pieces.
(4) Drag through a warm room.
(5) Enjoy.
Balsamic vinegar is optional.
