How does one manage to get the purri shaped like that, are they crispy as well? Sounds and looks really delicious and with that spicy filling!

I guess they make a huge roti and use something to cut them these small.
It's crispy and adding the filling & liquid makes it delicious. If you visit India or Bangladesh, it's must-have street food.
