I have an awesome recipe for Sun Dried Tomato Marinara to share with you, as well as a recipe for vegan Parmesan Cheese that will make you squeal with joy (I don’t know if anyone actually squeals nowadays, but I definitely did).

Homemade marinara sauce with sun-dried tomatoes adds a rich and robust flavor to traditional marinara sauce. Sun-dried tomatoes are known for their concentrated flavor, making them a great addition to the classic tomato-based sauce. This homemade marinara sauce is perfect for pasta, pizza, or any dish that calls for a tomato-based sauce. Here's a simple recipe to make it at home.

Ingredients:

  • 2 tablespoons olive oil
  • 1 large onion, finely chopped
  • 3 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes, chopped (oil-packed or rehydrated if dry)
  • 1 can (28 ounces) crushed tomatoes
  • 1 can (15 ounces) tomato sauce
  • 1 tablespoon tomato paste
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon crushed red pepper flakes (optional, for heat)
  • Salt and black pepper to taste
  • Fresh basil leaves, for garnish (optional)

Instructions:

  1. Heat the Oil and Sauté the Onion: In a large saucepan or Dutch oven, heat the olive oil over medium heat. Add the chopped onion and sauté for 5-7 minutes, or until translucent.

  2. Add the Garlic and Sun-Dried Tomatoes: Add the minced garlic to the saucepan and sauté for 1-2 minutes, until fragrant. Add the chopped sun-dried tomatoes and sauté for another 1-2 minutes.

  3. Add the Tomatoes and Seasonings: Pour in the crushed tomatoes, tomato sauce, and tomato paste. Stir to combine. Add the dried oregano, dried basil, and crushed red pepper flakes (if using). Stir well.

  4. Simmer the Sauce: Bring the sauce to a simmer over medium heat. Reduce the heat to low, cover the saucepan, and let the sauce simmer gently for 30-45 minutes, stirring occasionally to prevent sticking.

  5. Adjust Seasoning and Serve: After the sauce has simmered, taste and adjust the seasoning with salt and black pepper. If you'd like a smoother sauce, use an immersion blender to puree the sauce to your desired consistency. If you prefer a chunkier sauce, skip this step.

  6. Serve with Fresh Basil: When ready to serve, garnish with fresh basil leaves if desired. Use the marinara sauce with your favorite pasta, on pizza, or as a dipping sauce for breadsticks.

This homemade marinara sauce with sun-dried tomatoes can be stored in the refrigerator for up to a week or frozen for longer storage. It's a versatile sauce that can be used in various dishes. If you'd like more marinara recipes or other tomato-based sauces, I can share additional ideas. Enjoy your marinara sauce!
