I often add applesauce or mashed banana into my pancakes, but as I was prepping ingredients for my favorite breakfast recently and digging around in my fridge, I spotted a bowl of leftover steamed sweet potato–which I often keep around to throw into salads and quinoa dishes–and had a fabulous idea.

Vegan sweet potato pancakes are a delicious and healthy alternative to traditional pancakes. They are fluffy, slightly sweet, and full of flavor from sweet potatoes. Ingredients:

  • 1 cup mashed sweet potatoes (cooked and cooled)
  • 1 1/2 cups all-purpose flour
