Los saludo, comunidad de hivers. Hoy quiero hablarles de una de las cosas más deliciosas que he probado. No existen suficientes palabras para describirles un producto tan refrescante, tan adictivo y con sabores tan contrastantes como el cholado. Tuve oportunidad de probarlo en su propia cuna; en Jamundí, un municipio ubicado en la región sur del Departamento del Valle del Cauca, en Colombia.
I greet you, community of hivers. Today I want to talk to you about one of the most delicious things that I have ever tasted. There are not enough words to describe to you a product so refreshing, so addictive and with such contrasting flavors as cholado. I had the opportunity to tasted it in its own cradle; in Jamundí, a municipality located in the southern region of the Department of Valle del Cauca, in Colombia.
Créanme que no exagero. Es un postre elaborado con hielo raspado y jarabe de fruta, al que se le agrega fruta picada, un chorrito de jugo de limón, leche condensada y como si eso no fuera suficiente sabor, también lleva barquillos de galleta.
Believe me, I'm not exaggerating. It's a dessert made with shaved ice and fruit syrup, to which you add chopped fruit, a splash of lemon juice, condensed milk and as if that wasn't enough flavor, it also has biscuit wafers.
Ya es patrimonio del Valle, y en cualquier parque y estadio podemos conseguir a los choladeros, vendiendo estos deliciosos manjares, y en Jamundí existe el ¨Parque del Cholado¨, un sitio con varios puestos donde podemos disfrutarlos. Cada uno tiene su propia interpretación y variaciones, de acuerdo a las frutas y almíbares de cada uno.
It is already part of the Valley's heritage, and in any of the parks and stadiums we can get the choladeros (farmers) to sell these delicious dishes, and in Jamundí there is the ¨Park of the Cholado¨, a site with several stalls where we can enjoy them. Each one has its own interpretation and variations, according to the fruits and syrups of each one.
La historia narra que nació en una familia jamundeña, la familia Bonilla y que fue doña Rosina quien inició su venta. Inicialmente eran cubos de hielo raspado comprimidos y endulzados con miel, a los que agregaba limón y les colocaba un palito para que ofrecerlos como helados que su esposo vendía para contrarrestar el calor de la zona. Posteriormente su hijo los vendió con algunas variaciones; los comenzó a servir en vasos de vidrio y al hielo raspado les agregaba piña, lulo y limón. La gente empezó a llamarlos ¨las tres niñas¨ y empezó a ganar popularidad fuera de Jamundí. El paso siguiente fue la incorporación de papaya, banano, manzana, guanábana, uvas, mermeladas y cualquier otra fruta a gusto de los clientes, además de la sustitución de la miel por jarabe rojo y del vaso de vidrio por conos de cartón.
