Annakoot Sabji Recipe!

Annakoot is a mixed vegetable variant which is served as prashad in temples on the auspicious day of Govardhan pooja, 2 days after Diwali. It is a mixture of all the vegetables you can think of, one can add anything an everything available as seasonal vegetable. It is extremely healthy and nutritious and tastes amazing. Lets see how we make it.

Ingredients

• 3 tomatoes finely chopped
• Chopped Ginger pieces
• 3 chopped green chillies
• 2 potatoes
• 100 gms pumpkin
• 100 gms cauliflower
• 2 raddish
• 2 carrots
• 8-10 beans
• Handful of peas
• 200 gms palak
• 1 turnip
• 1 TBSP Red Chilli Powder
• ½ TBSP Turmeric Powder
• Dhaniya Powder
• Garam Masala
• Salt as per taste
• Oil for cooking

Step 1: Was hand cut all the vegetables into small pieces.

Step 2: Chop the tomatoes and ginger into small pieces.

Step 3:Heat oil in a pan. Add ginger and tomatoes and saute well.

Step 4: Add all spices and let it cook until it starts to leave the oil from sides.

Step 5: Now add all the vegetables to the mixture stir for 5 minutes on high flame.

Step 6: Cover with lid and let the veggies cook for about 20 minutes on low flame.

Step 7: Use a masher to mash the vegetables properly.

Step 8: Serve hot with puris like they do in temples.
