Chirer Pulao (Pulao made with the flattened Rice)

Hello friends,

   Hope you all are doing well. Like everyday today I also came here to share with you another snack recipe, which is famous in Bengal (India)" Chirer Pulao"( Pulao made with the flattened Rice). Before sharing the recipe would like to share the benefits of the flattened Rice:-

1) Low in Carbs:- The flattened Rice is quite low in calories. One bowl of cooked vegetable flattened Rice has just around 250 calories.

2) Rich in iron:- Lactating or pregnant women are often advised to eat soften flattened Rice,as these women are at high risk of gestational anemia.

3) Easily Digestive:- The flattened Rice is light on stomach and can be easily digested.

4) A good source of healthy carbohydrates:- The flattened Rice is made up of 76.9% of carbohydrates and about 23% of fats.

5) A good Probiotic:- This may come as a surprise to many, but the Flatten Rice is a good Probiotic food too. This is because the flattened Rice made by parboiling paddy and then drying it out in the sun for few hours.

6) Controls blood sugar levels:- The flattened Rice considered a good meal for diabetics. Being rich in fiber, the flattened Rice promotes a slow and steady release of sugar into the blood stream.

     Hope this is a helpful information for you all . So let's start making " The flattened Rice Pulao".



Ingredients:-

1. Flattened Rice or beaten Rice- 2-1/2 cups.(thick ones).

2. Onion- 2 small (finely chopped).

3. Carrot- 1(finely chopped).

4. Green peas- 1/2 cup.

5. French beans- 1/2 cup(finely chopped).

6. Cauliflower florets- 1/2 cup.

7. Potatoes- 1 small (small cubes).

8. Roasted peanuts- 2 tbsp.

9. Raisins- 1-1/2 tbsp.

10. Cashew nuts- 1 tbsp (spited).

11. Green chilies- 2( chopped).

12. Sugar- 2 tsp.

13. Salt-To taste.

14. Cumin seeds- 1/2 tsp.

15. Ghee(clarified butter)- 2-1/2 tbsp.

16. Coriander leaves- 2 tbsp(finely chopped).



Preparation Method:-

Step 1- First steam the vegetables mentioned above. (Potatoes, green peas, carrots, French beans, cauliflower) in a steamer until it is cooked 90%. Once cooked, remove from the steamer and keep the vegetables aside.




Step 2- Place the flattened Rice in a colander and rinse it well under running water. Stir the flattened Rice gently using Fingers while rinsing, otherwise they will become mushy at the time of cooking. Set aside.

Step 3- Heat ghee in a heavy bottomed pan on medium flame. Add cumin seeds and allow it to crackle. Next add sliced onions and saute till light brown in color.

Step 4- Once the onions are tender, add the turmeric powder,steamed vegetables, roasted peanuts, cashew nuts, raisins, salt, sugar, green chilies. Stir to combine and finally add rinsed flattened Rice.



Step 5- Now gently stir the flattened Rice until all the ingredients come together. Lower the flame and cover the pan.

Step 6- Allow the flattened Rice to cook in the steam for about 3-4 minutes with the vegetables.Adjust salt and seasoning at this stage if required.



Step 7- After 3-4 minutes, you will notice the Pulao has Puffed-up slightly. Turn of the flame.



Step 8- Now garnish with chopped coriander leaves. Serve hot with evening tea.
