Famous South Indian Snack....Mullu Murukku (Chakli)

Dear Friends,
Today I will share with you a famous south Indian snack recipe Murukku or Chakli. It is a popular snack in different states in India like- Tamil Nadu, Andhra Pradesh, Karnataka, etc. This snack is not only popular in India! But, also popular in Sri Lanka, Malaysia, Singapore, etc. It's believed that the snack; was invented in Tamil Nadu. Manapparai, the small town in Tamil Nadu, the snack known as murukku. The snack's title originates from the Tamil name for "twisted," which belongs to its form. I hope you like the information behind the dish.

Ingredients:-
1.Rice Flour- 2cups.
2.Urad Dal(split & skinned black gram)-8tbsp.
3.Green Chilies-2-3 (chopped).
4.Sesame Seeds-1tbsp.
5.Carom seeds-1-1/2tsp.
6.Asafoetida-1/4tsp.
7.Ginger-1inch(chopped).
8.Red chili powder-1/2tsp.
9.Turmeric powder-1/2tsp.
10.Fresh cream- 1/4cup.
11.Salt- To taste.
12.Sunflower Oil- As required for deep frying.

Preparation Method:-
Step 1- First, place a frying pan on medium flame. Dry roast urad dal until lightly golden. Transfer in a bowl, once cool down make a powder with them. Set aside.

Step2- Next, in a blender jar, add chopped ginger, green chilies, cream. Make a smooth paste and transfer into a bowl.

Step 3- Take a large mixing bowl, add rice flour, urad dal flour(step-1), ginger cream chili paste(step-2), sesame seeds, carom seeds, salt, asafoetida, Red chili powder, turmeric powder. Mix well.

Step 4- Now, add little by little water, knead and make a soft dough; now, grease the Sev Sancha with oil. Fill the dough into the molds.

Step 5- Place a wok on medium flame and add sufficient oil. Once the oil is heated well, drop a small portion of the dough in the oil. Check the temperature of the oil; If the dough gently lifts means oil is ready.

Step 6- Now, on a butter pepper, make a spiral shape by pressing the molds. Slowly slide the chakli in the oil and fry them in batches, till golden and crisp.

Step 7- Take them out from the oil and transfer them to a kitchen towel. Once they become cool down, it's ready to serve. Also, you can keep them in an airtight container.
