Dear Friends,
In India, winter is about to finish, and summer is on the way to arrive. So, today I decided to share with you an Indian version Ice-cream recipe. I believe every Indian likes to have this Ice-cream! which is famously known; in India as' Kesar Pista Kulfi.' Before sharing the recipe would like to share with you the story behind the Kulfi.

Kulfi is a delightful Indian delicacy. It introduced; through the days of the Mughal Emperor Jahangir in the 16th century. One day Jahangir's spouse became to appear up by a plan to satisfy her beloved desires. To create the dessert, she collected crushed ice of the foothills from the Himalayas, sugared milk, and pulp of several fruits; By processing, she developed up among the frosted dessert, which is the kulfi; we recognize today. I hope you like the information behind the delicacy. So, let's start making Kesar Pista Kulfi.

Ingredients:-

1.Full fat milk- 2liters.
2.Cardamom powder-1-1/2tsp.
3.Condensed milk- 1can/400g.
4.Pistachios- 1/2cup(finely chopped).
5.Saffron strands- 1tsp.
6.Cashewnut paste- 1tbsp.
7.Wheat bread slice- 1piece.
8.Almonds- 1tbsp(finely crushed).
9.Wooden ice cream sticks- As required(depend on the size of the molds).

Preparation Method:-
Step 1- First, in a bowl soak, saffron with 3tbsp of warm milk, then grind the bread slice in a grinder jar and set aside.

Step 2- Place a heavy bottom pan on medium flame. Add milk and bring it to a boil. Once milk will start boiling, add crushed bread crumbs and stir continuously(make sure there shouldn't be any lumps).

Step 3- Now, reduce the flame and add cardamom powder, almonds, cashew paste, condensed milk, saffron soaked milk. Stir and combine well for about 5minutes.

Step 4- Next, add pistachios and again mix well. Let the milk boil for a couple of minutes, then turn off the flame.

Step 5- Once the kulfi mixture will become at room temperature, transfer the mixture to the molds. Insert an ice cream stick, and seal the molds.

Step 6- Keep all molds in the freezer for 15-16 hours. Once kulfi is frozen, take them out from the freezer and keep the molds underwater for a couple of minutes(about1-2minutes). It will help to release kulfi, from the molds.

Step 7- Now, Kesar Pista Kulfi is ready to serve chilled.
