Torta de Auyama / Pumpkin Cake
(Auyama= Calabaza= Pumpkin)
Ingredientes:
1 taza auyama sancochada
1 huevo
½ taza aceite
½ taza azúcar
½ papelón rayado
2 tazas harina leudante
1 cdta vainilla
Para la cubierta: (opcional)
2 cda. Azúcar
2 cda coco rallado
Ingredients:
1 cup boiled auyama
1 egg
½ cup oil
½ cup sugar
½ lined paper
2 cups flour
1 tsp vanilla

2 tbsp Sugar
2 tablespoon grated coconut
Procedimiento:
Sancochar la Auyama. Puedes hacerlo con su concha o pelada. Al ablandar, bajar del fuego, colar (preferiblemente dejar escurriendo en un colador para que bote el exceso de agua).
Luego hacerla puré con un tenedor o el prensa papas.
Se bate el huevo con el azúcar, el aceite, luego se mezcla con el puré y el papelón rayado y la esencia de vainilla.
Mezclar muy bien y luego agregar la harina. Mezclar hasta que quede homogénea.
Enharinar un envase, agregar la mezcla. Ahora espolvoreas las 2 cdas de azúcar y el coco.
Meter al horno precalentado a 180° por 30 a 45 min.
Probar con un palillo al centro si sale seco, ya está lista.
Dejarla refrescar a temperatura ambiente, ella sola se despega del molde.
Desmoldar y cortar al gusto.
Listo!! 😋😛
