Hello Foodies!
Macaroni is a nice, light and healthy breakfast cooked with elbow pasta lots of veggies and some spices. It’s like a easy version of pasta with no sauces and only veggies. Obviously one can choose to make it cheesier and spicier by adding different flavours but I like to keep it simple.
For those who are relating it to mac and cheese, it’s definitely not that. You can play around in many ways with this recipe; add the veggies of your choice, give it an Italian flavour using seasonings and olive oil. Whatever suits you the best. Also, I prefer using the semolina based elbow pasta which makes it a real healthy breakfast.

Ingredients

1. | Elbow Pasta | 250 gms |
2. | Onion | 2 Units |
3. | Capsicum | 1 Unit |
4. | Tomato | 2 Units |
5. | Green Peas | 50 gms |
6. | Salt | 1 TBSP |
7. | Red Chilli Powder | 1 TBSP |
8. | Turmeric Powder | 1/2 TBSP |
9. | Tomato Ketchup | 2 TBSP |
Method
Step 1: Cut the onion and capsicum into slices and chop the tomatoes.
Step 2: Take a deep pan and heat some oil in it.
Step 3: Add the sliced onion and saute until golden brown.
Step 4: Add capsicum and tomatoes and cook for around 5 minutes.
Step 5: Add all the spices and mix well.
Step 6: In a side pan, boil some water. Add the elbow pasta and peas to the boiling water and cook until the pasta softens. Add 1 TBSP salt as well while boiling.
Step 7: Add the boiled pasta and peas to the vegetables. Add tomato ketchup and give it a good mix.
Step 8: Serve hot with cold coffee for breakfast.
A great choice of dish (which seems to be very tasty), especially for those who are vegetarian.
