It’s a new #FungiFriday 🎉 and this time we have a topic: FOOD

My contribution to this food #FungiFriday by @ewkaw.

(As said) I write my post with a fun element and some added excitement for my search for some delicious mushrooms to eat… it took me far and beyond 😉😎
So here we go:
We are entering our stable to search for our horse to ride into the forest. See it has a saddle bag that is still empty and needs to be filled with some delicious mushrooms for tonight’s dinner.

After a long ride over some winding paths

We arrived at the forest, I bind my horse to a tree and go further on foot.


We take our hand basket for easy foraging through the forest.

Let’s enter:

I’m searching high and low for mushrooms… shall I find some?

Maybe here next to these bushes…

Or here behind this giant tree…

No… no mushrooms yet.
But wait… what do I see?

Could this be it? It’s fungi, but I guess not the right kind. Hhhmmmm we search further.
I know I’m getting closer.
There a path and tree that looks familiar, have I been here before?…. We find some very old dried mushrooms. I think these won’t work well in our dinner. Let’s search further.

Aaaa my eye is catching some great areas where I found in the past some mushrooms…
Let’s go and hurry up. Maybe there are some mushrooms this time.
We go over some hills and around some bushes and big trees.

A few more trees…
And see, Yes, I knew there was a possibility to finding some mushrooms here.
We found them.




I was already worried because it was getting late and dark soon. And our journey back home is still far through the forest and on winding paths.
We pick some mushrooms that are safe to
eat and place them in our hand basket.
Walk quickly now…

Beyond those trees we go and then we are back at our trusted horse.
We fill up our saddle bag and jump on our horse.

Let’s go…

Look a border we will cross this time, a path to the left. We have to pay some coins to be allowed on it, but it will go quicker than the journey we took before.
We want to be home before it gets dark.

Under Bridges…

Through some villages


At last… we made it, we are back just before the dark.
Let’s put our horse in it’s stable and go inside our home.
Now we can prepare our dinner for this evening’s meal. Steak with mushroom sauce and baked potatoes.
Let’s see;
We found some nice oyster and chestnut mushrooms.

We will clean the mushrooms first with some paper towel and place them on the side.
Then we prepare our potatoes by washing and drying them. I stab them a few times with a sword.

and cover them with olive oil and some sea salt.

Wrap them up in some aluminium foil and place them in the “open fire” to make baked potatoes. I think the fire is about 220 degrees Celsius. With the foil they can lay in there for about 50 minutes to be done.

Now we cut the mushrooms and place our ingredients for the mushroom sauce on the side.



Mushroom sauce:
Olive oil
4 cloves of garlic to mince
200ml cream
1 teaspoon of Dijon mustard
1 teaspoon of Worcestershire sauce
Some dried parsley
Some fresh rosemary
Salt
Peppercorns to crush
about 150ml chicken stock
Some cornstarch for binding at the end (I combine it later in a cup with some water)
I always go about my recipes /measurements on my feeling. So it is mainly; add to your liking the ingredients. You can also add some white wine if you would prefer. But be careful to make the sauce not too thin.
(When about 30 minutes on the timer are gone)
Add about 2 spoonfuls of olive oil to a medium high heat pan.
And the cut up mushrooms.

Then mince the garlic cloves and add them.

Cook this for about 4 minutes.

Add then the broth, mustard, Worcestershire sauce, cream, shopped rosemary, parsley. Some salt and crushed pepper. (If you like some wine, but not too much) And let it all reduce slowly on medium heat.
Important, when about 45 minutes are gone on the timer (from the 50 minutes baking the potatoes) reduce the temperature of the fire to 180 degrees Celsius. you can do this quickly by opening “a door” or taking out some wood, or even figuring out what area of the fire would be 180 degrees Celsius you can use. 😉 the potatoes can stay in…
In the meantime we will start preparing our steak.
We add some salt and pepper to the steak.
Add a good bit of butter and olive oil to a pan on medium to high heat. When melted add the steak. I would say about 2 minutes one side.
I add now also some cloves of garlic and dried thyme.
Turn the steak over for another 2 minutes and baste with a spoon the oil over the meat.

When the time is done, place the pan also in the fire for about 2,5 to 3 minutes. In the part that is 180 degrees Celsius.

Now we pay very much attention to the following:
Take out the pan carefully WITH SOME GLOVES
And do NOT HANDLE THE PAN WITHOUT made that mistake in the past… it happens quickly. Even just moving around on the stove again. So please be careful 🙏🏻
We rest the meat in some aluminium foil now for about 5 minutes.

We finish the mushroom sauce by binding it.
We add some cornstarch and water (the same amounts) in a little cup to combine. And add this carefully to the pan with sauce.
When it is thick enough turn off the heat, it is done.

We take our potatoes out of the fire and place them on a plate. Open the foil a bit and carve the potatoes.
Open the meat package after it rested, and if you want you can cut it in strips or leave it whole.

I cut the steak and placed it on a plate next to the potato.
Now add some mushroom sauce over the steak and our dinner is finished.
