Yesterday we went to the cheap store and they had cases of the little round mushrooms for 99 cents a case so we bought 2 cases. I needed to can them before going fishing today so I started at 5am. You have to pressure can mushrooms so it is a longer process than water bath canning. I boiled them for 5 minutes before putting them in the jars, I added 1 tablespoon of lemon juice to each jar then pressure canned them at 11 pounds of pressure for 45 minutes.
It made 11-pint jars and 6 half-pints. The lemon juice keeps them from turning brown. You do not have to use it but I like for them to look good.
After finishing the canning we went fishing. It was a lousy day. We tried all over and could not catch much.
If you are not going to catch much, then they need to be much bigger. We did manage to catch 75 pounds, but that will barely pay for fuel.
If not catching much wasn't bad enough, it had to start raining but we were lucky because there was no lightning.
It was just light little rain showers, 3 of them went over us. Each time it rain just long enough to make me put my sleekers on.

I've never canned mushrooms before. But then, I've never run across such a hot deal on fresh mushrooms as you did!
Yes, it was a great deal, that store always has deals like that on fresh produce. I don't know if you have a hard time finding canning lids as I am having. I bought some off-brand from Dollar General because Ball or Kerr lids are nowhere to be found. These off-brand ones are no good, 4 jars did not seal. I am so pissed and now wonder if the others will hold their seal. Luckily I only used 6 of them.
It has been a challenge to find the good ones here, too.
