In their quest to find a sustainable substitute or augment traditional coffee, researchers examined other seeds and pits that could potentially mimic the taste or chemical composition of coffee. One such candidate was the pit of the date palm, which bears similarities in structure to coffee cherries. However, although date pits share physical characteristics with coffee beans, they inherently lack the flavor profile of coffee. This posed a challenge: could these pits be chemically altered to resemble coffee more closely?
