I think it's because only the engineering and math types are involved with crypto, while the UX/UI people stick to Web 2.0.

Sort of, but this is because of demand. Web 2 actively recruits those types, because they need it or their product will fail.
In Web3, it can be trash and people will still use it, because they think they can get rich.
